Coconut and Lime Date Chocolates

These Coconut & Lime Date Chocolates are a delicious homemade treat that feels indulgent while using naturally sweet ingredients. The chocolate combine soft, caramel-like dates with tropical coconut, zesty lime. and a smooth chocolate coating. They offer the perfect balance of sweetness and freshness in every bite.

Equipment needed

  • Sharp knife
  • Chopping board
  • Food processor
  • Tablespoon
  • Saucepan
  • Glass or metal bowl
  • Forks
  • Plate

Ingredients

  • Dates x 200g
  • Coconut flour x 45g
  • Lime juice x 1 – 2 tbsps
  • Lime zest x 2
  • Salt x 1 – 2 pinches
  • Dark chocolate x 80 – 100g

Method

  • Slice the dates lengthways and remove the stones.
  • Put the dates and coconut flour into the food processor cup.
  • Zest the limes and add the zest to the processor.
  • Slice 1 lime in half and squeeze the juice from the lime.
    • It should be about 1 – 2 tbsps of juice.
  • Place the lid on the blender and blend these ingredients until a small ball is formed.
  • When the ball forms remove the lid and the blade from the processor.
  • Dampen your hands under the tap so the mixture doesn’t stick.
  • Grab a piece of the mixture and roll into a ball.
  • Place the ball onto the pre-lined baking tray.
  • Continue until you have used up all of the mixture.
    • You may need to dampen your hands a couple of times during this process.
  • Once all the mixture has been used place the baking tray into the fridge for about 30 minutes.
  • Meanwhile, place a saucepan of boiling water on a medium heat on the hob.
  • Put the metal bowl on top of the saucepan.
  • Break up the bar of chocolate and place it into the bowl.
  • Let the chocolate completely melt and the remove it from the heat.
  • Remove the date balls from the fridge.
  • Roll them in the melted chocolate and place back onto the pre-lined baking tray.
    • If you have leftover melted chocolate you can dunk the date balls back into the chocolate two or three times or until it’s all gone.
  • Place back into the fridge until the chocolate is hard.
  • Then serve and enjoy.
