Spicy Prawn and Egg Stir Fry Rice

My son Ted is 10 and Ted loves prawns. I know when I serve Ted prawns he will eat the dish they are in. Ted also love egg fry rice so I decided to put these two foods together. Then I decided to add spices to the meal. The spices added extra flavour and they really complimented the dish. It was a tasty dinner that we all enjoyed and we hope you enjoy it too.

Equipment

  • Baking tray
  • Sharp knife
  • Chopping board
  • Frying pan or wok
  • Tablespoon
  • Teaspoon

Ingredients

  • Cooked prawns x 500g
  • Spring onions x 1 bunch
  • Garlic x 2 cloves
  • Cooked rice x 300g
  • Eggs x 2
  • Carrot x 1
  • Bamboo shoots x 1 240g tin
  • Honey x 2 tbsps
  • Apple cider vinegar x 1 tbsp
  • Tamari x 2 tbsps
  • Mild, medium or hot chilli powder x 1 tsp
  • Ground ginger x 1 tsp
  • Ground sweet cinnamon
  • Dried oregano x 1 tsp
  • Salt and pepper to taste

Method

  • Mix the honey, apple cider vinegar, tamari, mild, medium or hot chilli powder, ground ginger, ground sweet cinnamon, dried oregano, salt and pepper to you tastes together in the small mixing bowl.
  • Set these ingredients to one side.
  • Next cut the tops and the bottoms from the spring onions.
  • Then slice the onions and set these to one side.
  • Peel and slice the carrot lengthways into small strips.
  • Squash the garlic under the blade of the knife and remove the skin.
  • Slice and dice the garlic.
  • Put a large frying pan or wok onto a high heat on the hob and add oil to the base.
  • When the pan or wok is hot, add in the eggs and scramble until they are cooked.
  • Set the cooked eggs to one side.
  • Now add in the spring onion and fry until translucent.
  • Next add in the garlic and fry for a further minute or so.
  • Drain the water from the bamboo shoots and add them to the pan.
  • Add in the carrot and fry for a couple of minutes.
  • Add in the cooked rice and mix all the ingredients together.
  • Pour over the mixture from earlier and continue to fry the rice for a further few minutes.
  • Now add in the prawns and the egg and mix these ingredients together.
  • Finally serve and enjoy.

Spicy Prawn and Egg Stir Fry Rice was a delicious dish that we all enjoyed. It was an easy dish to prepare and cook. The dish could be made with leftover rice or the rice can be cooked the day before and kept in the fridge oevrnight. Then it can be reheated when cooking this meal. The dish is not freezable but it is a quick meal to cook. It makes a great mid week dinner or super speedy weekend meal. However you decide to eat this meal, as always, please enjoy. Thank you xxx
