
Normally I like to cook curries with meat. I have in the past made a fish curry but I don’t think I’ve ever made one with salmon before. My son Ted seems to have lost his appetite for salmon. So I’m trying to ignite that passion for this food once again. The dish was quick and easy but it was packed with flavour. Plus with all the spices it had a lot of nutrients in that we need for the colder months to come. We loved this dish and we hope you will too.

Ingredients
- Salmon x 4 fillets
- Onion x 1
- Garlic x 2 cloves
- Courgette x 1
- Red Pepper x 1
- Tomatoes x 2 400g tins
- Garam masala x 1 tsp
- Ground ginger x 1 tsp
- Ground sweet cinnamon x 1 tsp
- Dried oregano x 1 tsp
- Salt and pepper to taste
- Olive oil
Method
- Preheat the oven 180°C or gas mark 5.
- Slice and dice the onion and set it to one side.
- Squash the garlic under the blade of the knife and remove the skin.
- Next slice the garlic.
- Peel the courgette and grate it.
- Cut the top from the red pepper and remove the core and the stalk.
- Slice and dice the flesh and set these ingredients aside.
- Put the large saucepan onto a high heat on the hob and add oil to the base of the pan.
- When the pan is hot add in the onions and fry until golden brown.
- Add in the garlic and fry for a minutes or until the garlic starts to turn a slightly golden brown colour.
- Next add in the red pepper and fry until it starts to soften slightly.
- It will take a good five minutes before it starts to go soft so keep going.
- Then add in the courgette and fry for a further few minutes.
- Pour over the tomatoes and bring to the boil.
- Add in the garam masala, ground ginger, ground sweet cinnamon, dried oregano and salt and pepper to taste.
- Once it starts to boil turn the heat down and leave to simmer.
- Put the salmon onto a baking tray and place the tray into the oven for about 15 minutes.
- Cook rice or a side of you choice as per the packet instructions.
- To check the salmon is cooked put a fork into it and if it pulls away easily it’s done.
- Remove from the oven and serve.
- Then enjoy.

Simple Salmon Curry was a hit in our house. My husband Howard, son Ted and I were very pleased with this dinner. The best part about this meal is the fact that you can prepare and make the sauce in advance of the meal. Then you can freeze it for another occasion.
