
During the week if we don’t have any leftovers from the meal the night before I enjoy making myself a salad. I enjoy a wide variety of salads but pasta is my favourite. Also I love to add a lot of different ingredients to my salads. Tuna is just one of the ingredients I really like to add. In recent months I tried a spicy tuna pasta dinner. It was delicious so I decided to try spices in the pasta dish I make. I’m so pleased I did. The meal was so tasty and I hope you enjoy it as much as I did.

Serves 1
Equipment
- Large saucepan
- Tablespoon
- Teaspoon
- Tin opener
- Colander
- Salad mixing spoon and fork
Ingredients
- Tuna x 1 105 gram tuna
- Pasta x 75 grams
- Eggs x 1
- Rocket x 2 handfuls
- Tomatoes x 10 – 12
- Olive oil x 2 tbsps
- Apple cider vinegar x 2 tsps
- Smoked paprika x 1 tsp
- Ground ginger x 1 tsp
- Ground sweet cinnamon x 1 tsp
- Cayenne pepper x 1 pinch
- Dried oregano x 1 tsp
- Salt and pepper to taste
Method
- Put the saucepan with water in it on a high heat and bring to the boil.
- Place the pasta into the water and cook as per packet instructions.
- In the bowl add the olive oil, apple cider vinegar, smoked paprika, ground ginger, ground sweet cinnamon, cayenne pepper, dried oregano and salt and pepper and mix together.
- Chop the tomatoes in half and add them to the salad dressing.
- Give them a bit of a squeeze before they go in to add extra flavour to your pasta.
- Then add the rocket.
- Drain the tinned tuna and add to the dressing as well.
- Mix all these ingredients again.
- Once the pasta has cooked, drain in the colander and add to the salad dressing mixture.
- Toss all the ingredients together.
- Then serve and enjoy.

Spicy Tuna Pasta Salad was delicious. I made this for a lunch the other day and it was scrummy. It made my taste buds tingle and I have to admit if I made two bowls I probably would have eaten them both. The dish would make a yummy dinner but it does also make a great lunch too. The salad dressing could be made in advance of the meal and stored in the cupboard. Therefore if you enjoyed the salad dressing you could make lots more of it. It will keep for a good six months.
