Spicy Orange Popcorn

Christmas Eve is always movie night in our house. It’s been a tradition since Ted, our son who is now 10, was small. We would always allow him to stay up a little later the night before Christmas. The house elves, who would visit from the North Pole, would leave on Christmas eve and leave a box for Ted to open. It used to contain a DVD or Blu Ray for us to watch that night. Nowadays they don’t tend to leave us a DVD anymore as we have most movies digitally.

The elves always let mummy know to cook popcorn too. Every year I try different flavours but always forget to video the recipe. This year, I decided to test out this recipe idea early and I’m pleased to say it was a huge hit. We loved it and we hope you’ll be enjoying it this Christmas as well. Serves 3 – 4 people

Equipment needed

  • Large saucepan and lid
  • Small saucepan
  • Tablespoon
  • Teaspoon
  • Scales
  • Bowl

Ingredients

  • Popping corn x 50g
  • Coconut oil x 2 tbsp
  • Maple syrup x 1 tbsp
  • Orange x 1/2 juice
  • Ground cinnamon x 1 tsp
  • Ground ginger x 1 tsp
  • Ground cloves x 1/4 tsp
  • Ground nutmeg x 1/4 tsp

Method

  • Start by making the coating for the popcorn.
  • Put the small saucepan on a medium heat.
  • Next put coconut oil x 1 tbsps and all of the maple syrup, ground cinnamon, ground cloves, ground ginger and ground nutmeg into the saucepan.
  • Squeeze the juice of half the orange into the saucepan as well.
  • Stir until they are combined together.
  • Set aside.
  • Then using the large pan on a high heat melt the other tbsp of coconut oil and add the popping corn.
  • Place the lid back on and shake vigorously until all the corn has popped.
  • It may take a little time for the popcorn to start popping so don’t give up.
  • Finally remove the corn from the heat and add the coating.
  • Stir the popcorn round as you add the coating as it will spread more evenly throughout.

Spicy Orange Popcorn was big hit this year. We are definitely going to eat this on our Christmas Eve movie night. It’s simple, easy to prepare and cook and doesn’t cost a fortune either. Plus it’s very tasty and very Christmassy too. It doesn’t last until the next day as it tends to go soft after a while. Therefore I recommend you eat it as soon as you make it.
