Herby Roasted Parma Ham Chicken

Normally at our Christmas table there are only a few people so I don’t bother to buy a turkey. Although I would use the leftovers in other recipes a whole turkey is expensive. Instead I will be making roasted chicken breasts. This year I’ve decided to make herby chicken breasts wrapped in Parma Ham. We will have all the trimmings with the roast this Christmas but less of the fuss. Below is a video and recipe for you.

Herby Roasted Parma Ham Chicken

Equipment

  • Board
  • Baking tray
  • Carving knife
  • Carving board

Ingredients

  • Chicken breasts x 4 or 2 large
  • Parma or Prosciutto ham x 4 – 8 slices
  • Oregano x 2 – 4 small sprigs
  • Rosemary x 2 – 4 small sprigs
  • Thyme x 2 – 4 small sprigs

Method

  • Preheat the oven to 180° or gas mark 4.
  • Put the chicken breasts onto the chopping and cut them lengthways in half.
  • Open the chicken breasts out so they lay flat on the chopping board.
  • Place the sprigs of oregano, rosemary and thyme into the chicken.
  • Wrap the each chicken breast in 2 pieces of Parma or Prosciutto ham.
  • Put these breasts onto the baking tray.
  • When the oven has preheated, put the tray in for 25 – 30 minutes.
  • Put a skewer into each breast and if the juices run clear the chicken is cooked.
  • If not, put the chicken back into the oven until the juices run clear.
  • Remove the chicken from the oven and leave to rest for 10 minutes.
  • Then serve with roast potatoes, vegetables and cabbage.
  • Enjoy.

Herby Roasted Parma Ham Chicken was a yummy meal we all enjoyed. It was very easy to prepare and cook. I think it makes a brilliant alternative Christmas dinner too. We did have leftover with this meal which could of been frozen but I decided to eat the chicken dish with pasta. It was really tasty. However you decided to eat this dish, as always, please enjoy.
