Crab and Sweet Potato Pesto Salad

Honestly, I would never have thought to use pesto as a salad dressing but it really works well. Especially on a warm salad like this one. The other day I found pesto in the fridge and I decided to put it together with this dish. The combined ingredients gave the meal a mouth watering and moreish flavour that I just loved. It was so tasty that I had to share the recipe with you.

Serves 4

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Baking tray
  • Salad/mixing bowl
  • Tablespoon
  • Salad folks

Ingredients

  • Sweet potato x 800g
  • Red pepper x 1
  • Cherry tomatoes x 40
  • Olive oil
  • Salt and pepper to your tastes
  • Crab x 4 tins
  • Rocket x 4 handfuls
  • Pesto x 1 recipe 4 – 8 tablespoons

Method

  • Preheat the to 200°C or gas mark 6 and put the baking tray in at the same time.
  • Peel and cut the sweet potato into 1 inch or bite size pieces.
  • Cut the top from the red pepper and remove the core and the stalk.
  • Slice and dice the flesh.
  • Cut the cherry tomatoes in half.
  • Place all of these ingredients into the baking tray.
  • Drizzle with olive oil and sprinkle over the salt and pepper to your tastes.
  • Toss these ingredients together.
  • Put the tray into the oven and cook for about 25 – 30 minutes or until the sweet pototoes are golden brown around the edges.
  • When the sweet potato is golden brown remove the tray from the oven.
  • Place all the ingredients into the salad/mixing bowl.
  • Add in the tinned crab, rocket and pesto.
  • Then carefully toss all this ingredients together.
  • Finally serve and enjoy.

Crab and Sweet Potato Pesto Salad was a delicious meal that I enjoyed. My husband Howard and son Ted aren’t to keen on some of the ingredients in this dinner. So I made this dish for myself. It was easy to prepare and cook. It made a lovely lunch but it would make a really great dinner as well. Also you could double up the ingredients and make this as a cold salad for the next day.
