Oven Baked Chicken Fajitas

Oven baking is a great way to get dinner on the table without to much fuss. Normally when I cook fajitas I make the meat part in a large saucepan. The other day I didn’t feel like standing by a hot stove so I decided to throw all the ingredients into a baking tray and bake the meat in the oven. As you can imagine it was melt in the mouth so yummy. Of course, it was a recipe I had to share with you. Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Baking tray
  • Teaspoon
  • Small mixing bowl

Ingredients

  • Onions x 1
  • Chicken x 500g
  • Red peppers x 2 large
  • Mild, medium or hot chilli powder x 1 tsp
  • Smoked paprika x 1 tsp
  • Onion powder x 1 tsp
  • Garlic granules x 1 tsp
  • Cayenne pepper x 1/4 – 1 tsp (depending on how spicy you like it).
  • Ground cinnamon x 1 tsp
  • Salt and pepper x 1/4 – 1/2 tsp
  • Sour cream x 1 small tub or soured cashew nut cream cheese x 1 recipe
  • Lime x 1
  • Guacamole x 1 recipe
  • Wraps x 8
  • Salad of your choice
  • Oil for the pan

Method

  • Preheat the oven to 180°C or gas mark 5 and put the baking tray into the oven.
  • Make the cashew nut cream cheese and add the juice of 1 lime to it.
  • Make the guacamole as per the recipe.
  • Mix the mild, medium or hot chilli powder, smoked paprika, onion powder, garlic powder, cayenne pepper, ground cinnamon and salt and pepper in the small mixing bowl.
  • Set the homemade spice rub aside.
  • Peel and slice the onions.
  • Cut the tops from the pepper and remove the seed and green stalk.
  • Now slice the flesh of the pepper.
  • Next cut the chicken breasts into 2 inch pieces.
  • Place these ingredients into a baking tray and drizzle over olive oil.
  • Sprinkle over the spice mixture.
  • Toss all of these ingredients together.
  • When the oven has preheated put the baking tray in.
  • Cook for about 25 – 30 minutes or until the chicken is golden brown and the juices run clear.
  • Remove from the oven and cut the lime in half.
  • Squeeze the juice from the lime over the baking tray ingredients.
  • Serve with the guacamole, sour cream or soured cashew nut cream cheese, wraps and salad.
  • Then enjoy.
Oven Baked Chicken Fajitas

Oven Baked Chicken Fajitas was delicious and we loved it. It was very easy to prepare and cook. It can also be made in advance of the meal and stored in the freezer. If it’s cooked I would recommend eating it cold or at room temperature. I’m not sure reheating chicken is good for us. Therefore double portions can also be made from this meal. It also makes delicious leftovers too. However you decide to eat this dish, as always, please enjoy. Thank you. xxx
