My husband Howard, son Ted and I love a mince pie or two at this time of year. Howard really enjoys the homemade ones but Ted just told me I put pickled onions in mine. So this year Howard and I will be eating all the mince pies I bake this Christmas. I like to bake homemade ones at Christmas as I have a slight gluten intolerance.
Sadly when we buy shop brought mince pies they don’t agree with me. For this recipe I used butter but you can use ghee or coconut oil too. The pastry recipe is versatile so can be adapted to suit your needs and tastes. We will be having a good munch on a mince pie or two this festive season and we hope you will too. Makes 6 pies
Equipment
- Saucepan
- Blender
- Cling film
- Chopping board
- Rolling pin
- Muffin tin
- Plastic brush
- Cookie cutter x 1 large
- Cookie cutter x 1 small
- Cooling rack
Ingredients
- Almond flour x 150g
- Tapioca starch x 55g
- Salt x 1/2 tsp
- Unsalted butter, ghee or coconut oil x 55g
- Egg x 1 large
- Slow Cooker Mince Meat x 1 recipe
Method
- Place the almond flour, tapioca starch, salt, unsalted butter, ghee or coconut, and the egg into the food processer.
- Blend these ingredients together until they form a dough ball.
- Wrap in the ball in cling film.
- Put the pastry into the fridge for a good couple of hours or overnight.
- To prepare the muffin tins pour oil into the muffin tin holes.
- Spread the oil all over with the plastic brush.
- Remove 30 minutes before using the pastry.
- Spread extra tapioca starch over the chopping board and roll out the pastry.
- Cut the rounds with the cookies cutters.
- Remember to cut one large round and one smaller.
- Place the larger round in the muffin tray.
- Fill the pastry with slow cooker mince meat.
- Then put the smaller round top on.
- Repeat this process until all the pastry is used.
- Place the muffin tin into the fridge for thirty minutes.
- Meanwhile preheat the oven to 200° or gas mark 6.
- Once the oven has preheated put the pies in.
- Bake for about 12 – 15 minutes or until the pastry is golden brown.
- Then remove and leave to cool.
- When the pies have cooled serve with cream, ice cream or coconut cream and maple syrup.
- Then enjoy.

Almond Flour Pastry Mince Pies were yummy. There will no doubt be plenty more made and consumed this year. The pastry is easy to prepare and bake. Plus the mince pie filling I made in the slow cooker in yesterdays blog post. The mince pie filling can be kept in a cool, dark place for years. The pastry can be made and frozen.
