
While I was watching tiktok or Youtube shorts I noticed someone making a delicious and healthy mayonnaise. Of course I had to try this recipe but I wanted to make it my own. My son Ted and I have a shared love of roasted garlic. I decided to roast a bulb of garlic and then add it to my version of the mayonnaise. It was so yummy that I decided to share it with you as a little gift at Christmas. It’s definitely one to remember. We loved it and we hope you will too. Below is a video and recipe for you.

Ingredients
- Garlic x 1 bulb
- Eggs x 1 large
- Water x 80mls
- Olive oil x 60mls (or an oil of your choice)
- Apple cider vinegar or lemon juice x 2 tsps
- Salt and pepper to taste
Method
- Preheat the oven to 200°C or gas mark 6.
- While the oven preheats put the baking into the oven.
- Slice the top from the garlic and spread oil over the top.
- You can also sprinkle over a little bit of salt.
- Once the oven has preheated remove the baking tray.
- Put the garlic sliced side down onto the baking tray.
- Cook the garlic for about 25 – 30 minutes.
- When the garlic has turned golden brown remove from the oven and leave to cool.
- While the garlic is cooling hard boil the eggs for 8 – 9 minutes.
- Once the eggs are cooked remove from the hob.
- Pour the hot water through a colander and add cold water to the eggs in the pan.
- Leave to cool in the cold water for 1 minute.
- Drain the cold water and crack the eggs.
- Leave to cool completely for about 10 minutes.
- Once the eggs have cooled remove the shell.
- Next pour 80mls of water into the blender cup.
- Add in the eggs, olive oil, apple cider vinegar or lemon juice and slat and pepper to taste.
- Remove the skin from the garlic cloves and add them into the cup too.
- Blend these ingredients together until smooth.
- Pour the contents of the cup into a storage bowl or box.
- Finally serve with a meal of your choice and enjoy.

Simple Garlic Mayonnaise was a tasty condiment to prepare and blend. It was slightly time consuming but the efforts were worth the results. It is recommended that the mayonnaise be consumed within four days. The whites from hard boiled eggs when frozen tend to go hard and they lose water. It’s best to consume this mayonnaise within 4 days. You can eat it in sandwiches, salads and it could be eaten as a high protein snack too.
