Roasted Tomato and Green Bean Salad

My husband Howard is a master at making grill tomatoes for a fry up. A few years ago Howard decided to add dried mixed herbs to the tomatoes and it was delicious. Shh, don’t tell him but I’ve decided to steal his idea for a salad. As much as I love a fry up I love salad the same way. I thought I would add Howard’s idea to green beans and pine nuts. I have made a similar recipe in the past but I thought I would give it a new lease of life. I really enjoyed this one and I hope you will too.

Equipment

  • Sharp knife
  • Chopping board
  • Tablespoon
  • Teaspoon
  • Baking tray
  • Saucepan
  • Frying pan

Ingredients

  • Tomatoes x 8 – 10 (on the vine preferably)
  • Frozen green beans x 2 handfuls
  • Pine nuts x 20 – 40 grams
  • Olive oil x 2 tbsps
  • Salt x 1 – 2 pinches
  • Dried mixed herbs x 1 tsp
  • Pepper to taste

Method

  • Preheat the oven to 180°C or gas mark 5.
  • Slice the tomatoes in half and place into a baking tray.
  • Pour over the olive oil and sprinkle over the salt and dried mixed herbs.
  • Gently rub the salt, dried mixed herbs and olive oil into the tops of the tomatoes using your fingers.
  • Once the oven has preheated put the tray in.
  • Bake for about 25 – 30 minutes or until the tomatoes are a golden brown.
  • While the tomatoes are in the oven put a saucepan of water on a high heat.
  • When the pan is boiling put the frozen green beans in.
  • Bring the pan to the boil again and then turn the heat down.
  • Leave to simmer for 3 – 5 minutes or cook as per the packet instructions.
  • Put the small frying pan onto a medium to high heat on the hob.
  • Add oil to the base of the pan.
  • When the pan is hot add in the pine nuts and fry until they start to turn brown.
  • Turning them occasionally in the pan.
  • Once they are gold brown remove from the heat and leave to cool.
  • Pour the green beans through a colander over a sink
  • Then put the green beans into a salad bowl or onto a plate.
  • Spread over the pine nuts.
  • Remove the roasted tomatoes from the oven and put these into or on the salad.
  • Then serve with a meat or fish dish of your choice.
  • Finally enjoy.

Roasted Tomato and Green Bean Salad was a very easy to prepare and cook. I ate this with a leftover chicken and quinoa. It could be eaten with fish or steak too. Also rice or pasta makes great side to eat with this salad. You can cook this dish and store it in the fridge until you want to eat it. It also make yummy leftovers too.
