Southern Spice Sweet Potato Omelette

Eggs are an ingredient that you can add lots of flavour too. That is exactly why I love oven baked omelettes. They are easy but can be made very flavoursome. Recently my husband asked for southern fry chips. I’m not a person to buy products like this one. My son went to look for a recipe online. We then adapted the recipe and I’ve been using it in everything ever since. Now I have discovered it makes a yummy breakfast, lunch or dinner. I love this dish and I hope you will too.

Equipment

  • Sharp knife
  • Chopping board
  • Large mixing bowl
  • Whisk or fork
  • Teaspoon
  • Deep sided baking tray

Ingredients

  • Eggs x 8 – 12 large
  • Parma ham x 8 – 12 slices
  • Sweet Potato or potato x 800g
  • Courgette x 1 small
  • Onion granules x 1 tsp
  • Garlic granules x 1 tsp
  • Mild chili powder x 1 tsp
  • Smoked paprika x 1 tsp
  • Cayenne pepper x 1/2 tsp
  • Salt and pepper to taste

Method

  • Preheat the oven to 180º or gas mark 4.
  • Start by peeling and chopping the potato into 2 centimetre cubes.
  • Put this ingredients into the baking tray and drizzle oil over the top.
  • Toss the vegetables in the oil and put the baking tray into the oven for about 15 – 20 minutes.
  • Slice the Parma ham widthways and set to one side.
  • Now peel the courgette and grate it.
  • Crack the eggs into a bowl and mix with a fork.
  • Add in the grated courgette and sliced Parma ham.
  • Sprinkle over the onion granules, garlic granules, mild chili powder, smoked paprika, cayenne pepper and salt and pepper to taste.
  • Mix these ingredients together.
  • Remove the potatoes from the oven and then pour over the egg mixture.
  • Sprinkle over the nutritional yeast or grate the mature cheedar over the top.
  • Put the baking tray back into the oven and cook the omelette for about 25 – 30 minutes or until golden brown.
  • Then serve with a salad and enjoy.

Southern Spice Sweet Potato Omelette was a delicious dinner. I also made it for breakfast and the leftovers I had for lunch too. It was an easy meal to prepare and cook. The dish could be made the day before and eaten as a cold lunch the next day. All the ingredients are freezable but personally I prefer food cooked fresh.
