Southern Spice Quinoa Loaf

Quinoa is the seed of a grain that is very versatile. When mixed with other ingredients it make can a delicious bread. As I discovered a few years ago. I have not made a quinoa loaf in such a long time that I felt like making it again. My husband gave me the idea of southern spices the other day and I have had quite a few ideas from it. All of the ideas I’ve had have been very tasty especially this one. Of course I had to share the recipe with you. Below is video and a recipe for you.

Makes 1 loaf

Equipment

  • Food processor
  • Mixing bowl
  • Mixing Spoon
  • Small bowl
  • Fork
  • Tablespoon
  • Teaspoon
  • Bread tin
  • Plastic brush
  • Baking paper

Ingredients

  • Quinoa x 200g
  • Gluten free oats x 200g
  • Baking powder x 1 tsp
  • Coconut or brown sugar x 2 tbsp
  • Mild chili powder x 1 tsp
  • Smoked paprika x 1 tsp
  • Cayenne pepper x 1/4 tsp
  • Onion granules x 1 tsp
  • Garlic granules x 1 tsp
  • Salt x 1 tsp
  • Eggs x 2 large
  • Milk x 200mls
  • Oil for the tin

Method

  • Preheat the oven to 180°C.
  • Pour the quinoa into the food processor and blend until it resembles flour.
  • Now pour this into the mixing bowl along with the gluten free oats, baking powder, sugar mild chili powder, smoked paprika, cayenne pepper, onion powder, garlic granules and salt.
  • Blend these ingredients together.
  • Pour these ingredients into a large mixing bowl.
  • In the small bowl crack the eggs and add the milk.
  • Whisk these ingredients together with a fork.
  • Next pour these wet ingredients onto the dry ones.
  • Stir all of these ingredients together until they form a sticky dough.
  • You may need to add a bit more milk if the mixture is dry.
  • Add oil to the bread tin and spread it around with the plastic brush, until the oil evenly coats the inside of the tin.
  • Scrunch the baking powder between your hands and spread it across the base and around the sides of the tin.
  • Now put the dough into the tray and pat it down.
  • Spread it as evenly as you can across the base of the tin.
  • Put the tin into the oven for 25 – 30 minutes or until golden brown on top.
  • Once it’s golden brown, remove from the oven and leave to cool.
  • When it’s cool enough to touch, take the bread from the tin.
  • Again leave to cool.
  • Then slice a chunk from the bread and serve.
  • Enjoy.

Southern Spice Quinoa Loaf was delicious. It was easy to prepare and cook. The bread is delicious with eggs and avocado or served with soups, stews and curries. It can also be made and frozen. All of the ingredients in this dish are freezable so you could make a big batch and freeze it for another occasion. It was also yummy as leftover the next day too.
