Slow Cooker Steak, Veggies and Mash Potato

Even during the warmer months my son Ted and I love a steak dinner. Although I don’t like to stand by a hot stove to cook them. Therefore I decided to get the slow cooker from the cupboard. Even in summer I still use the wonderful machine. My husband Howard isn’t a great fan on steak. When it’s cooked in the slow cooker it tends to be softer and less chewy. It just melts in the month. Even Howard enjoy this dish. We hope you will too.

Equipment

  • Sharp knife
  • Chopping board
  • Slow cooker
  • Baking tray
  • L:arge mixing bowl

Ingredients

  • Steaks x 500
  • Onion x 1
  • Red pepper x 1
  • Carrots x 1
  • Green beans x 2 handfuls
  • Chicken or vegetable stock or bone broth
  • Thyme x 1 small handful
  • Salt and pepper to taste
  • Tamari x 2 tbsp
  • Potatoes x 800 – 1 kg
  • Olive oil x 2 tbsp
  • Butter x 2 knobs

Method

  • Peel and slice the onion.
  • Cut the top from the red pepper.
  • Remove the core and the stalk.
  • Then slice the flesh of the pepper.
  • Next peel the carrot and slice it lengthways into batons.
  • Pour in the chicken or vegetable stock or bone broth into the slow cooker pot.
  • Place the vegetables into the pot.
  • Remove the leaves from the thyme by pulling backwards down the stalk.
  • Put these into the pot and add salt and pepper to taste.
  • Pour in the tamari or soy sauce.
  • Mix these ingredients together.
  • Place the steaks on top and add salt and pepper to the steak on both sides.
  • Rub the salt and pepper into the steaks.
  • Put the lid on and turn the slow cooker onto high four 2 – 3 hours or low for 5 – 6 hours.
  • An hour or so before the end of cooking time preheat the oven to 200°C or gas mark 5.
  • Pierce the potatoes with the knife.
  • Put the potatoes into the baking tray.
  • Once the oven has preheated put the tray into the oven.
  • Cook for an hour.
  • To test the potatoes are cooked put a knife through them and if they are soft in the middle there done.
  • If they aren’t soft put the potatoes back in for another 5 minutes.
  • Check again and keep doing this until they are soft.
  • Once the potatoes are cooked remove from the oven and leave to cool.
  • Turn the slow cooker off and remove the lid.
  • Leave the steaks and veggies to cool too.
  • When the potatoes are cool enough to touch slice them in half.
  • Scoop the potato from the skins and put into the large mixing bowl.
  • Discard the skins.
  • Add oil and butter to the potatoes and mash until smooth.
  • Remove the steaks from the slow cooker pot and slice them into chunks.
  • Then serve the potatoes, steaks and veggies and pour over the stock.
  • Finally enjoy.

Slow Cooker Steak, Veggies and Mash Potato was a yummy meal. It was very easy to prepare but it was slightly time consuming. The effort were worth the results. Before you cook this dinner you could put the steak into a frying pan and sear it for a minute or so either side. That’s if you prefer the outside more crunchy. It also made delicious leftovers too. You could prepare this meal at the weekend and store it in the freezer. Then all you have to do is put into the slow cook and make the mash.
