Pork Mince Omelette

My Mince Pork Omelette is a quick and tasty recipe. It’s full of flavour, easy to make and perfect for breakfast, lunch or dinner. It’s a great meal when you want something filling but simple. Plus it’s delicious hot or cold too. We love it and we hope you will too.

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Vegetable grater
  • Saucepan
  • Stirring spoon
  • Tablespoon
  • Teaspoon
  • Baking tray

Ingredients

  • Pork mince x 500g
  • Leek x 1
  • Carrot x 1
  • Courgette x 1
  • Potatoes x 600g
  • Tamari x 2 tbsp
  • Dried mixed herbs x 1 tsp
  • Salt and pepper to taste
  • Eggs x 4

Method

  • Preheat the oven to 180°C or gas mark 5.
  • Peel and grate the carrot and courgette.
  • Next peel the potatoes and cut them into 1 inch pieces.
  • Cut the top and the bottom from the leek.
  • Slice the rest of the leek into ½ centimetre pieces.
  • Put a large pan onto a high heat on the hob and add oil to the base.
  • Leave the pan to heat up.
  • When the pan is hot add in the leek and fry until it starts to soften.
  • Then add in the grated carrot and courgette.
  • Fry these ingredients for about 1 minute or so.
  • Next add in the mince pork and break up with the spoon.
  • Once broken fry until golden brown.
  • Set to one side.
  • Next put the potatoes into the baking tray and drizzle oil over the top.
  • Toss the potatoes in the oil and put the tray into the preheated oven.
  • Leave to cook for about 10 – 15 minutes or until the start to turn slightly golden.
  • Meanwhile crack 4 eggs into a bowl and put the pork mince mixture into the bowl.
  • Stir these ingredient until everything is well mixed together.
  • When they are gold remove from the oven and pour over the egg mixture.
  • Spread evenly across the base of the baking tray and put back into the oven for 25 – 30 minutes.
  • Or until golden brown.
  • When the top is browned and the egg is solid remove the tray from the oven.
  • Leave to cool.
  • Then serve with a salad or vegetables of your choice.
  • Finally enjoy.
