Sweet and Sticky Pork Chops with Vegetable Egg Fry

My little family and I love to add flavour to our meals in this house. This recipe is a new quick and tasty weeknight favourite. It’s packed with flavour, colourful veggies and the perfectly sticky pork is comfort food that comes together in no time. We really enjoyed this dinner and we hope you will too. Ingredients for the glaze

  • Pork Loin Chops x 500g
  • Honey x 2 tbsp
  • Tomato Ketchup x 2 tbsp
  • Tamari or soy sauce x 2 tbsp
  • Ground ginger x 1 tsp
  • Garlic granules x 1 tsp
  • Salt and pepper to taste

Method

  • Put the honey, tomato ketchup, tamari  or soy sauce, ground ginger, garlic granules and salt and pepper to taste.
  • Mix these ingredients together.
  • Add in the pork chops and cover in the sauce.
  • Preheat the oven to 200°C.
  • Put the chops into the fridge until the oven has preheated.
  • Once the oven has preheated add the pork chops to the baking tray.
  • Place the tray into the oven for 25 – 30 minutes or until the fat has gone a lovely golden brown colour and the juices run clear.
  • You may need to turn the chops over half way through too.
  • When the chops are cooked remove from the oven and leave to rest.

Ingredients for the vegetable stir fry rice

  • Rice x 200 – 300g
  • Spring onions x 8 – 10
  • Carrot x 1
  • Green beans x 1 – 2 handfuls
  • Eggs x 2 – 4
  • Tamari or soy sauce x 2 tbsps
  • Salt and pepper to taste.

Method for the vegetable stir fry rice

  • Cook the rice via Boiling Brown Rice to Prefection
  • Leave to cool for a couple of hours or preferably overnight in the fridge.
  • Slice the tops and the bottoms from the spring onions.
  • Cut the onions into half centimetre pieces.
  • Peel the carrot and slice it in the middle.
  • Slice the two pieces of carrot lengthways in half.
  • Then lengthways into quarters.
  • Slice lengthways until you make batons.
  • Set these vegetables aside.
  • Put a large pan onto a high heat on the hob and add oil to the base.
  • When the pan has heated up add in the spring onion.
  • Fry until they start to soften.
  • Next add in the carrot and green beans and fry for a couple of minutes.
  • Remove the vegetables from the pan and put in a bowl.
  • Crack the egg into the cup or a bowl and scrambled.
  • Add more oil, if necessary, and add in the eggs.
  • Fry until the eggs have cooked.
  • Now add in the cooked rice and vegetables.
  • Mix these ingredients together.
  • Pour over the tamari or soy sauce to you tastes.
  • Sprinkle over salt and pepper to your tastes too.
  • Then serve with the chops and enjoy.
