Slow Cooker Simple Tomato Chutney

This Christmas I’ve decided to add a burst of flavour to our festive celebrations with this Slow Cooker Simple Tomato Chutney. It’s the perfect make-ahead treat. The chutney is packed with sweet tomatoes, gentle ginger spice, and a hint of tang. It’s a brilliant all-rounder you can pair with cheeses, cold meats, sandwiches, and your favourite Christmas nibbles. Best of all, the slow cooker does all the hard work, leaving you free to enjoy yourselves. Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Teaspoon
  • Stirring spoon

Ingredients

  • Tomatoes x 900g
  • Onion x 1
  • Apple x 2
  • Coconut sugar or a sugar of your choice x 150g
  • Raisins x 150g
  • Apple cider vinegar x 250mls
  • Ground ginger x 1 – 2 tsp
  • Salt x 1 – 2 pinches

Method

  • Peel, slice and dice an onion.
  • Slice and dice the tomatoes.
  • Next peel and slice the apples into quarters.
  • Cut a right angle on both sides of the quarter piece of apple and remove the core.
  • Dice the quarter into 1/2 centimetre pieces.
  • Put the tomatoes into the slow cooker pot along with the onions, apples, coconut sugar, raisins, apple cider vinegar, ground ginger and salt.
  • Place the lid on the pot and turn onto high for 2 – 3 hours or on low for 5 – 6 hours.
  • When the chutney reduces down remove the lid and leave it to cool.
  • Store the chutney in sterilized glass jars 1 – 3 weeks in a cold dark place.
  • Then serve with cheese or in a sandwich and enjoy.
  • Refrigerated after opening.
  • To test the chutney you can put a small amount onto a plate and store it in the freezer for 30 minutes.
  • It should replicate how it will taste once it has matured.
