Tomato Chutney and Oat Loaf

There’s something deeply comforting about homemade bread, especially when it’s infused with bold, savoury flavours. This Tomato Chutney and Oat Loaf brings together the wholesome goodness of oats with the rich, tangy sweetness of tomato chutney, creating a loaf that’s both hearty and full of character. Equipment

  • Large mixing bowl
  • Teaspoon
  • Vegetable peeler
  • Vegetable grater
  • Tablespoon
  • Loaf tin
  • Grease proof paper
  • Cooling rack

Ingredeints

  • Oats x 190g
  • Rice or pea protein powder x 120g
  • Baking powder x 1 tsp
  • Chia seeds x 40g
  • Hemp seeds x 40g
  • Courgette x 1 small
  • Egg whites x 500mls
  • Eggs x 2
  • Tomato chutney x 2 – 4 heaped tbsp
  • Salt x 1/4 tsp

Method

  • In a large mixing bowl add in the oats, rice or pea protein, baking powder, chia seeds, hemp seeds and salt.
  • Mix these ingredients together.
  • Crack the eggs into a mug and scramble.
  • Add in the egg white and the scrambled eggs.
  • Peel and grate the courgette and add it to the mixture.
  • Mix all of these ingredients together and add in the tomato chutney.
  • Leave these ingredients in the mixing bowl overnight.
  • The next day preheat the oven to 200°C or gas mark 6.
  • Pre line the loaf tin.
  • Pour oil in the base of the tin and spread it around the tin with the brush.
  • Scrunch a piece of grease proof paper and place in the loaf tin.
  • Add a little more oil and spread it across the tin and around the sides.
  • Pour in the loaf mixture into the pre lined tin.
  • Spread the mixture as evenly as possible.
  • When the oven preheats place the tin into the oven and bake for 25 – 30 minutes.
  • Until the outside is golden brown and when a skewer is put into the loaf it comes out clean ish.
  • Remove from the oven and leave to cool.
  • Slice and serve with breakfast lunch or dinner.
  • Then enjoy.
