
These Banana and Blueberry Protein Porridge Pancakes are a nourishing breakfast that’s both delicious and filling. Equipment
- Blender
- Airtight container
- Frying Pan
- Fish slice
Ingredients
- Egg whites x 100mls
- Egg x 1 large
- Coconut water, water or milk x 100 – 150 mls
- Oats x 45g
- Ground flaxseed x 1 tbsp
- Banana x 50g
- Blueberries x 1 handful
- Ground ginger x 1 tsp
- Ground sweet cinnamon x 1 tsp
- Ground cloves x 1/4 tsp
- Coconut oil for the pan
- Maple syrup to taste
Method
- Pour the egg whites, egg, coconut water, oats ground flaxseed, banana, 2/3 of the blueberries, ground ginger, ground sweet cinnamon and ground cloves into the blender cup.
- Blend these ingredients together until smooth.
- Let the mixture sit for 5 minutes.
- Put a large frying pan onto a high heat on the hob.
- Add coconut oil to the base and let it melt down.
- When the pan is hot pour the pancake mix into the frying pan.
- Spread the mix as evenly as possible across the base.
- Let the pancake cook.
- It will start to cook around the edges first.
- Once it starts to dry in the middle and get bubbles in the mixture flip the pancake over.
- At a certain point you may need to turn the heat down to a medium heat.
- It will depend on your pan and hob.
- Once the pancakes is cooked remove from the pan and put it onto a plate with kitchen towel underneath it.
- Repeat the above process for the rest of the mixture remembering to add more oil to the pan if necessary.
- Then serve with the rest of the blueberries and maple syrup.
- Finally enjoy.
