Serves 1 – 2

Equipment

  • Blender
  • Airtight container
  • Frying Pan
  • Fish slice

Ingredients

  • Egg whites x 100mls
  • Egg x 1 large
  • Coconut water, water or milk x 100 – 150 mls
  • Oats x 45g
  • Ground flaxseed x 1 tbsp
  • Banana x 50g
  • Blueberries x 1 handful
  • Ground ginger x 1 tsp
  • Ground sweet cinnamon x 1 tsp
  • Ground cloves x 1/4 tsp
  • Coconut oil for the pan
  • Maple syrup to taste

Method

  • Pour the egg whites, egg, coconut water, oats ground flaxseed, banana, 2/3 of the blueberries, ground ginger, ground sweet cinnamon and ground cloves into the blender cup.
  • Blend these ingredients together until smooth.
  • Let the mixture sit for 5 minutes.
  • Put a large frying pan onto a high heat on the hob.
  • Add coconut oil to the base and let it melt down.
  • When the pan is hot pour the pancake mix into the frying pan.
  • Spread the mix as evenly as possible across the base.
  • Let the pancake cook.
  • It will start to cook around the edges first.
  • Once it starts to dry in the middle and get bubbles in the mixture flip the pancake over.
  • At a certain point you may need to turn the heat down to a medium heat.
    • It will depend on your pan and hob.
  • Once the pancakes is cooked remove from the pan and put it onto a plate with kitchen towel underneath it.
  • Repeat the above process for the rest of the mixture remembering to add more oil to the pan if necessary.
  • Then serve with the rest of the blueberries and maple syrup.
  • Finally enjoy.
