Equipment

  • Sharp knife
  • Chopping board
  • Large saucepan
  • Tablespoon
  • Teaspoon
  • Loaf tin

Ingredients

  • Tomato ketchup x 2 tbsps
  • Tamari x 2 tbsps
  • Mince beef x 500g
  • Onion x 1
  • Courgette x 1
  • Carrot x 1
  • Ground flax seed x 4 – tbsps
  • Mild chili powder x 1 tsp
  • Smoked paprika x 1 tsp
  • Cayenne pepper x 1/4 tsp
  • Garlic powder x 1 tsp
  • Onion powder x 1 tsp
  • Salt and pepper to taste

Method

  • Pour enough oil onto the baking tray to cover the base.
  • Peel and grate the courgette and the carrot.
  • Next peel, slice and dice the onion.
  • Set these ingredient to aside.
  • Put the mince beef into a large mixing bowl.
  • Along with the tomato ketchup, tamari, grated courgette, grated carrot, ground flax seed mild chili powder x 1 tsp, smoked paprika x 1 tsp cayenne pepper x 1/4 tsp, garlic powder x 1 tsp, onion powder x 1 tsp and salt and pepper to taste.
  • Dampen your hands and scrunch these ingredients together.
  • Set these ingredients aside.
  • Grab your loaf tin and add oil to the base.
  • Brush the oil across the base and around the sides of the tin.
  • Place the Parma ham or bacon across the base of the tin and up the sides too.
  • Put the meat mixture in the middle of the tray and flatten it until it reaches the sides.
  • Now put the extra ham over the top of the meatloaf.
  • Place the meatloaf in the fridge for a couple of hours or overnight.
  • Preheat the oven to 200°C or gas mark 6 and put a baking tray in at the same time.
  • Once the oven has preheated carefully remove the baking tray from the fridge.
  • Place the tray back into the oven.
  • Cook for about 25 – 30 minutes or until the meat is golden brown and the juices run clear.
  • Serve with mash and veggies.
  • Then enjoy.
