Roast Chicken with Cajun Spice Egg Fry Rice

My Roasted Chicken with Cajun Spice Egg Fried Rice is a quick, satisfying meal that’s full of tender roasted chicken, fluffy rice, vegetables, eggs and a smoky Cajun kick. It’s perfect for a busy weeknight, easy to customise with your favourite vegetables, and a fantastic way to turn simple ingredients into something special.

Equipment

  • Mixing bowl
  • Baking Tray
  • Saucepans x 2
  • Colander
  • Sharp knife
  • Chopping board
  • Tablespoon
  • Teaspoon
  • Stirring spoon

Ingredients for the chicken

  • Chicken breasts x 500g
  • Olive oil x 2 tbsps
  • Salt and pepper to taste.

Method for the roast chicken

  • Preheat the oven to 200°C or gas mark 6.
  • Put the chicken breasts into the large mixing bowl.
  • Pour the oil over the breasts.
  • Sprinkle over salt and pepper to taste.
  • Rub the oil, salt and pepper into the breasts.
  • Place the breast into a baking tray.
  • When the oven is preheated place the tray into the oven.
  • Cook the breasts for about 25 – 30 minutes or until the juices run clear.
  • Remove from the oven and leave to rest for 5 minutes.

Ingredients for the Cajun Spice stir fry rice

  • Rice x 200 – 300g
  • Spring onions x 8 – 10
  • Carrot x 1
  • Yellow pepper x 1
  • Green beans x 1 – 2 handfuls
  • Paprika x 1 tsp
  • Smoked paprika x 1 tsp
  • Cayenne pepper x 1/4 tsp
  • Garlic granules x 1 tsp
  • Onion granules x 1 tsp
  • Dried oregano x 1 tsp
  • Eggs x 2 – 4
  • Tamari or soy sauce x 2 tbsps
  • Salt and pepper to taste.

Method for the vegetable stir fry rice

  • Cook the rice via Boiling Brown Rice to Prefection
  • Leave to cool for a couple of hours or preferably overnight in the fridge.
  • Slice the tops and the bottoms from the spring onions.
  • Cut the onions into half centimetre pieces.
  • Peel the carrot and slice it in the middle.
  • Slice the two pieces of carrot lengthways in half.
  • Then lengthways into quarters.
  • Slice lengthways until you make batons.
  • Next slice the top from the pepper.
  • Remove the core and the stalk.
  • Now slice the flesh.
  • Set these vegetables aside.
  • Put a large pan onto a high heat on the hob and add oil to the base.
  • When the pan has heated up add in the spring onion.
  • Fry until they start to soften.
  • Next add in the carrot, pepper and green beans and fry for a couple of minutes.
  • Remove the vegetables from the pan and put in a bowl.
  • Crack the egg into the cup or a bowl and scrambled.
  • Add more oil, if necessary, and add in the eggs.
  • Fry until the eggs have cooked.
  • Now add in the cooked rice and vegetables.
  • Mix these ingredients together.
  • Sprinkle over the paprika, smoked paprika, garlic granules, onion granules, dried oregano and salt and pepper to taste.
  • Pour over the tamari or soy sauce to you tastes.
  • Then serve with the chicken and enjoy.
