Equipment
- Almond Flour x 100g
- Tapioca starch x 35g
- Butter x 60g
- Coconut sugar x 60g
- Ground sweet cinnamon x 1 – 1 1/2 tsp
- Collagen powder x 15g
- Apples x 70g or two small or one large
- Vanilla extract x 1 tsp
- Pinch of salt
Method for the apple pieces
- Preheat the oven to 200°C fan or gas mark 5.
- Peel the apple, remove the core and cut it into 5 mm pieces.
- Pat them really dry with kitchen paper.
- This is important because excess apple juice can make the cookies too wet.
- Put them on a baking tray lined with baking paper.
- Bake fan for about 8–10 minutes, just until they soften slightly.
- Allow them to cool completely.
Method for the cookies
- Cream the butter and sugar together until smooth and creamy.
- Beat in the egg and vanilla.
- In another bowl, mix together the almond flour, tapioca starch, cinnamon, collagen powder and salt.
- Gradually add the dry ingredients to the wet mixture and stir until you have a soft cookie dough.
- Gently fold through the apple pieces, trying not to crush them.
- Line a baking tray with baking paper.
- Using the spoons scoop out a piece of the dough and place it onto the pre-lined baking tray.
- Continue until you have used up all of the cookie dough.
- Place the dough in the fridge for 20–30 minutes.
- Preheat the oven to 200°C fan or gas mark 5.
- Bake for approximately 10–13 minutes, until the edges are lightly golden.
- Leave them on the tray for 10 minutes before moving them, as they’ll be quite soft when they first come out.
- After 10 minutes carefully transfer them to a cooling rack and leave to cool further.
- Then serve warm or cold with cream or ice cream.
- Finally enjoy.
