Thankfully in this house I’m not the only person who loves fish. My husband isn’t the biggest fan but my son loves it. Although with this dish I was slightly apprehensive as I normally hide the fish in a sauce, potato or cheese. On this occasion, I was pleasantly surprised by my little family including my husband. Both of them ate it and said it was yummy so that was a bonus.
Pesto is a great go to food when you need a quick, easy meal. I have always thought about pasta and pesto together but I’ve been trying a few different recipes with my Red Pepper, Tomato and Cashew Nut Pesto. I have to admit that fish and pesto is a great combination. Pesto in moderation can be a filling and healthy meal. It’s a delicious sauce often made from basil, olive oil, garlic, parmesan cheese and pine nuts.
All of these ingredients have health benefits and they may be included in a well-balanced healthy diet. Ingredients such as the olive oil and pine nuts are higher in calories because they have fat content. Although, what makes this considered healthy is the fat is unsaturated. When consumed in moderation, unsaturated fat can contribute to an improvement in cholesterol as well as decrease inflammation in your body. Inflammation can be an indication for higher risk of heart disease, cancer, diabetes, Alzheimer’s and many other conditions with ageing.
We loved this dish and I feel when I’m in need of a go to food this will be on my menu. As I mentioned earlier both Ted and Howard ate everything on the plate. I was amazed as I really thought it was going to be a battle with both of them. Touch wood, I’m very pleased Ted likes fish as I’m a huge fan. If you’re a fish lover, like my son and I, then this is the dish for you. Worth a try.
- Baking tray
- Cod Steaks x 4
- Homemade Red Pepper, Tomato and Cashew Nut Pesto x 12 tbsp
- Sweet Potato Chips
- Serve with salad, peas or asparagus.
- Preheat the oven to 180°.

- Next place the cod steaks on the baking tray.
- Spread three tablespoons of the pesto on to the fish.
- Put in the oven for 15 – 20 minutes.
- Once the fish is flaking away easily the fish is cooked.

Flaky Fish with pesto is a quick, simple and easy food. It is now one of my go to dinners if I need a fast mid week meal. The great part about this dish is the pesto could be made at the weekend and stored in a glass jar with a lid. (We often use the large olive jars to store sauces in. Minus the olives, of course.) Any large jar will do as the pesto can be stored for a few weeks in the fridge. So if it’s not all eaten in the first week it can be used up in the second or at the weekend.
