- Salmon x 1 fillet or 1 tin
- Rocket x 1 handful
- Cucumber x 2 inch piece
- Olive oil x 2 tbsps
- Tamari or soy sauce x 2/3 tbsp
- Salt and pepper to taste
- Olives x 2
Method
- Preheat the oven to fan 200°C, 220°C or gas mark 6.
- Put the pumpkin puree into the mixing bowl and add in the chickpea flour, garlic granules, ground cumin, smoked paprika, baking powder, salt and pepper.
- Pour in the water and oil and mix these ingredients together.
- If you find the batter is too dry add a little water, a little each time until it forms a pancake batter consistency.
- When the batter is at a consistency you like, get the baking tray and brush oil on the base and around the sides.
- Scrunch up a piece of grease proof paper that fits inside the tray and brush the paper with a bit more oil.
- Pour the batter mix in and spread as evenly as possible across the base.
- Place the tray into the preheated oven and bake for 15 – 20 minutes depending on your oven.
- At this point you can also cook the salmon if you are using fresh fish.
- The fish will take 12 – 15 minute to cook.
- When the wrap is golden and the fish is flaking away from itself remove from the oven and leave to cool.
- Once cooled make the salad.
- Remove the skin from the salmon by slicing between the flesh and the skin. (Again if using fresh fish).
- Then place the salmon into the mixing bowl and break up the flesh with a fork.
- Now add in the rocket and the cucumber the the bowl.
- Pour over the oil and tamari or soy sauce.
- Add salt and pepper to taste.
- Then mix these ingredients together.
- Now slice the pumpkin wrap in half.
- Put the salmon salad on one side and place the other piece of bread on top.
- Grab to cocktail stick and put olives on the top.
- Then put the sticks into the sandwich near the cut end.
- Finally serve and enjoy.

Monster Salmon Sandwich is a simple dish that is easy to prepare and cook. It proves that simple ingredients can make spooky meals. The chickpea flour wraps are best made fresh and eat as soon as they are cooked and cooled. I made this for my lunch and thoroughly enjoyed it too. I hope you enjoy it as much as I did. Happy cooking and happy Halloween.
