Before our son Ted was born, my husband Howard and I would treat ourselves to a certain ‘chain restaurant’ pizza once in a while. We love pizza and I’m also pleased our son Ted does as well. Anything with bread and cheese and he’s at the table in no time. Sadly though, since I discovered I have a slight gluten intolerance, I can no longer enjoy this delicious treat. Or so I thought.

Both gluten and dairy are not the greatest food items for this women. So I have been searching for alternatives. I do eat cheese occasionally but it’s the most nutritious food for me. So I try not to eat it too often. However, I have now discovered Cashew Nut Cream Cheese which I’m OK eating and I can eat spelt flour occasionally too.

Spelt flour does contain gluten but it’s a low gluten flour. Spelt is one of the oldest cultivated crops and it is believed to have been used about 8,000 years ago. Bread wheat is very closely related to spelt flour and when wheat became popular it made spelt obsolete.

Now spelt is making a comeback as a health food especially in certain parts of Europe. Spelt flour has amazing health benefits which include its ability to help regulate the bodies metabolism, aid in creation of sex hormones, increase circulation and build strong bones. It is packed with nutrients, vitamins, minerals and essential organic compounds. Other cereals and forms of wheat don’t contain this amount of nutrition, which may explain its renewed interest. It’s a great food to feed the whole family.

Equipment needed

Vegan Cheesy Pizza

  • Large mixing bowl
  • Fork
  • Teaspoon
  • Measuring jug
  • Rolling pin
  • Board
  • Frying pan
  • Heat proof brush
  • Fish slice
  • Tablespoons x 4
  • Baking tray

Ingredients for the Spelt Flour Base or Flatbread

  • Spelt flour x 250g plus extra for dusting
  • Brown rice or oat milk x 150ml
  • Baking powder x 1 tsp
  • Xanthan gum powder x 1 tsp (optional)
  • Dried herbs du provence x 1 tsp
  • Olive oil for the frying pan

Method for the Spelt Flour Base or Flatbread

  • Measure the spelt flour into the large bowl and add the herbs du provence, baking powder and xanthan gum (optional).
  • Next measure the mix and add in it in slowly mixing with the fork.
  • Once it starts to form a dough, put your hand in and begin to kneed it.
    • If it needs more milk add it but you don’t want the dough to be sticky.
    • It needs to be like bread dough.
  • When a dough ball is formed, pat it down and fold as you would bread dough.
  • Pat back into a dough ball then cut into eight even pieces.
  • Separate them into eight dough balls.
  • Sprinkle the board if necessary with the spare spelt flour and roll each dough ball into a pizza shape.
  • Put the frying pan on a medium to high heat and drizzle the base with olive oil.
  • Spread the olive oil around the base of the pan.
  • When the pan is hot put a flatbread in and fry until browned on side.
  • It should take around 3 – 5 mins.
  • Turn over and brown the other side.
  • Put on a plate and set aside.
  • Repeat the process until all 8 are cooked.

Method for Assembling and Cooking the Pizzas

  • First slice the cherry tomatoes and set aside.
  • Place the flatbreads on the baking tray, you may need 2 trays depending on the size of the tray.
  • Spread the pesto over the base.
  • Next spread the cream cheese on top.
  • Lay the slices of cherry tomatoes on.
  • Finally put 10 olives on each pizza.
  • Sprinkle over the 4 tbsp of nutritional yeast (optional).
  • Put under the grill for three to five minutes.
  • It will heat the toppings up.
  • Serve with a salad and enjoy.

Pizza is a great meal the whole family can enjoy and this makes a really healthy option. My son really loves pizza and he really enjoyed this meal. The best part about this meal is that all of it is freezable. If you are short of time during the week you could make the base, pesto and cream cheese at the weekend then freeze it. It can then be defrosted and eaten during the week. Plus this pizza is extremely nutritious and so tasty. If you try these you may never go back to restaurant bought pizza again.
