Slow cooked roast beef

During the week we eat mainly vegan or vegetarian meals but on the weekend I like to treat us to meat. Roasts are one of our favourite dinners and on a Sunday it’s the meal to have in the UK. We don’t have roasts every Sunday but I know a few British people that love them. Normally we will have roast chicken but recently I have been looking at different meats and ways to cook them. Beef is our new favourite and it’s also not too bad for the body.

Red meat, like beef, is actually very high in protein and iron. Nowadays research suggests that over two thirds of humans are deficient in iron. Beef has the highest amount of iron over other meats like pork or chicken. The iron in beef is great for pregnant women as iron is vital for the growth and development of the foetal brain.

Protein also plays a key part in a healthy body and a balanced diet. It can help with muscle mass, the production of antibodies and the immune system. Plus it also contains a number of beneficial nutrients and it’s a source of B vitamins, vitamin D, selenium and zinc. So a great meat to eat as long as you only have it occasionally and even better when it’s slow cooked. Well worth a try.

Equipment needed

  • Sharp knife
  • Peeler
  • Chopping board
  • Slow cooker
  • Measuring jug


  • Rolled beef brisket x 1.5kg
  • Onions x 2
  • Carrots x 2
  • Celery x 2
  • Tomatoes x 2
  • Garlic x 2 cloves
  • Bay leaves x 2
  • Water x 250ml
  • Salt and Pepper to taste


  • Start by peeling the onion and then chopping it into quarters.
  • Next top and tail the carrots, peel them and then roughly chop into large chunks.
  • Next quarter the tomatoes and chop the celery into large chunks too.
  • Add these ingredients to the slow cooker pot along with the water, garlic and bay leaves.
  • Finally salt the beef by sprinkling it all over and then add salt and pepper to taste to the vegetables.
  • Turn the slow cooker on for 6 – 7 hours.
  • The meat by the end of the cooking time will be really tender and soft.
    • Optionally, to crisp the fat, you could put it into the oven for 20 mins on 200°C after finishing with the slow cooker.
  • Then leave to rest for about 15 – 20 minutes on both occasions.
  • During the cooking process you can cook your roast vegetables and while the beef is resting make a gravy.
  • To make the gravy you can use the stock from the bottom of the pan along with bone broth.
  • Just heat these ingredients together and add a thickener like brown rice flour.
  • Then slice the beef, serve the vegetables, add the gravy, serve and enjoy.

For me, this is a great recipe as I can put the roast beef in the slow cooker and I do not have to worry about cooking that part of the meal. It makes a Sunday roast so much easier. Don’t get me wrong I love cooking a roast but I’m all for making life easier. I normally buy a piece of beef that is double what we will need, then freeze the leftovers and use them in other dishes. I have a Beef Stir Fry in Plum Sauce coming on Friday. So watch out for that on my blog. However you decide to enjoy this meal, as always, enjoy.
