Cauliflower and Carrot Cheese and Pesto Pizza

Pizza is one of the world’s favourite fast foods. A lot of people in the world eat pizza everywhere, in restaurants, on street corners and at home. The list is endless. The story of a simple slice of pizza reveals a lot about world changes. For centuries people have been eating pizza. It all started many years ago in ancient Italy. People would eat flatbreads with a variety of toppings.

In the late 18th century in Naples the pizza was born. During this time the city of Naples began growing. Many people from the countryside started to move to this place. They were looking for work but as there weren’t enough vacancies for the amount of people living in the city the people fell into poverty. These people would rush around in search of work and they needed a cheap, easy meal to eat.

Pizza meet this need. That’s how the humble pizza was born. Nowadays there are a variety of way to make and cook a pizza. You can also use a variety of different ingredients. Therefore I thought I would share this delicious recipe with you. The base is very different to what we are used too but it made a lovely change. We loved this pizza and we hope you do too. Serves 4

Equipment

  • Vegetable
  • Grater
  • Muslin cloth
  • Mixing Bowl
  • Stirring spoon
  • Teaspoon
  • Tablespoon
  • Pizza stone or baking tray

Ingredients

  • Cauliflower x 1 small
  • Carrot x 1 small
  • Almond flour x 100g
  • Eggs x 2
  • Dried mixed herbs x 1 tsp
  • Salt and pepper to taste
  • Pesto x 4 – 6 tbsp
  • Tomato puree x 2 – 4 tbsp
  • Mozzarella x 1 ball

Method

  • Preheat the oven to 180°C or gas mark 5.
  • Peel the carrot and grate it.
  • Cut the cauliflower into quarters and grate it.
  • Put the cauliflower and carrot into the muslin cloth.
  • Pull up the four corners of the cloth so that the ingredients are covered in the cloth.
  • Twist the top to make sure the ingredients are inside.
  • Then squeeze the ingredients over the sink to get rid of any excess juice.
  • Now put the carrot and cauliflower into the bowl.
  • Add in the dried mixed herbs and almond flour.
  • Crack the eggs into the bowl and mix all of these ingredients together.
  • It should form a slightly wet dough, if it doesn’t add a little bit more almond flour.
  • Spread the mixture across the base of a pizza stone or a baking tray.
  • Please note if you are using a baking tray, either oil the bottom or use grease proof paper that you have oiled too.
  • Place the base into the oven for about 20 – 25 minutes or until it starts to turn golden brown.
  • While the base is in the oven prepare the pesto, if you haven’t already and slice the mozzarella.
  • Once the base is cooked spread over the pesto, tomato puree and put the mozzerella on top.
  • Place back into the oven for about 5 – 10 minutes or until the cheese has melted.
  • Then serve with a salad and enjoy.

Cauliflower and Carrot Cheese and Pesto Pizza was very gratefully received by my little family. They loved this dish. I was a bit unsure of using cauliflower as a base. My son Ted, who is 8, often tells me he is allergic to vegetables. Therefore I wasn’t sure if he would enjoy the cauliflower base. I was pleasantly surprised as both my husband Howard and Ted eat the lot. They both commented on the meal while eating it too. It’s always a good sign when they do. The pizza is quick and easy and would make a brilliant light lunch or dinner served with chips. However you decide to eat this dish, as always, please enjoy. Thank you xxx
