Googie’s Kitchen presents Sticky Noodle Prawn Stir Fry

During the week, like many parents, I enjoy quick meals that will help to feed my little family. My son Ted loves prawns and so does my husband Howard. Therefore I know this meal will be well received by them both. It pleases me that Howard and Ted like prawns as they are actually filled with nutrition.

Prawns are a rich source of selenium, one of the most effective antioxidants at maintaining healthy cells. They also contain high levels of Zinc, which is important to develop a healthy immune system. Eating prawns helps build strong bones because they contain phosphorous, copper and magnesium. That’s why I love prawns and why I like feeding them to my family in meals like this one.

Equipment

  • Jug
  • Stirring spoon
  • Tablespoon
  • Teaspoon
  • Sharp knife
  • Vegetable peeler
  • Chopping board
  • Wok or frying pan

Ingredients for the sauce

  • Bone broth, chicken or vegetable stock x 200ml
  • Tamari x 2 tbsps
  • Tomato puree x 2 tbsps
  • Honey or coconut sugar x 2 tbsps
  • Ground sweet cinnamon x 1 tsp
  • Dried mixed herbs x 1 tsp

Method for the sauce

  • Pour the bone broth, chicken or vegetable stock into a jug.
  • Add in the tamari, tomato puree, honey or coconut sugar, ground sweet cinnamon and dried mixed herbs.
  • Mix these ingredients together and set aside.

Ingredients

  • Prawns x 500g
  • Spring onions x 1 bunch 8 – 10
  • Carrot x 1 large
  • Bamboo shoots x 1 small tin
  • Water chestnuts x 1 small tin
  • Green beans x 1 handfuls

Method

  • Remove the tops and tails from the spring onions.
  • Peel and slice the carrot into batons.
  • Remove the lids from the bamboo shoot and water chestnuts.
  • Drain the water from the tins.
  • Put a large pan onto a high heat and add oil to the base of the pan.
  • Fry the spring onions until they start to soften.
  • Add in the carrots, bamboo shoots, water chestnuts and green beans.
  • Then fry these for a further few minutes.
  • Next add in the prawns.
  • If using uncooked prawns fry for two minutes on either side or until they turn pink all over.
  • If using cooked put them in the pan and pour over the sauce.
  • Leave to heat through for a few moments then remove from the heat.
  • Once the prawns are cooked pour for the sauce and leave to heat through for a minute or so.
  • Now cook the noodles as per the packet instructions.
  • Serve the noodle and the stir fry.
  • Finally enjoy.

Sticky Noodle Prawn Stir Fry was a hit with my little family. We all really enjoyed this dish. It was a very easy meal to prepare and cook too. You could make the sauce in advance of the meal and store it in the fridge or freezer. Although, it only takes a few minutes to make the sauce so I don’t think it saves much time. The meal, on the other hand, was so yummy and it’s definitely one dish we will be eating again soon. However you decide to eat this meal, as always, please enjoy. Thank you xxx
