
In recent months, my son Ted who is nine, has been bullied about his size. Ted has been asking me if we could do something about it so I agreed. A few months ago I had a hair test done. Hair testing can help to determine the type of food that you can and can’t eat. I have found this very helpful so I decided to test my son’s hair.
We have discovered that he is able to eat a keto diabetic diet. Therefore I have been investigating keto and all the foods he can eat. Then I decided to make these scones for Ted. Ted loved them and so did my husband Howard. The scones were a hit and I will definitely be making these again soon.

Make 4 small or two large scones
Equipment
- Sharp knife
- Chopping board
- Large mixing bowl
- Grater
- Teaspoon
- Mixing spoon
Ingredients
- Spring onions x 4
- Almond flour x 150g
- Baking powder x 1 tsp
- Cheese x 100g
- Eggs x 2 large
- Salt to taste
Method
- Preheat the oven to 200°C or gas mark 5.
- Pre-line a baking tray with grease proof paper and set aside.
- Remove the tops and bottoms from the spring onions.
- Slice the onions to half centimetre pieces and set aside.
- Put a frying pan onto a high heat on the hob and add oil to the base of the pan.
- When the pan is hot add in the spring onions and fry until they start to soften.
- Set the pan to one side and leave the onions to cool.
- Grate the cheese and put this into the large mixing bowl.
- Add in the almond flour, baking powder and salt to taste.
- Next add in the spring onions and mix all of these ingredients together.
- Now add in the eggs and mix again until all the ingredient form a dough ball.
- Dampen your hands and split the mixture into two or four equal parts.
- Then form a burger or bun shape in your hands.
- Once the shape has formed place it on the pre-lined baking tray.
- Put the tray into the oven and cook the scones/buns for about 20 – 25 minutes or until golden brown.
- Remove from the oven and leave to cool.
- Then serve as a bun for a burger or as a roll for soup and enjoy.

Cheese and Onion Scones were a success in our house. Howard and Ted gobbled all of them. The ate them with soup and then they had them instead of burger buns with a salmon burger as well. Ted also ate a little bun I had made as leftovers the next day too. All the ingredients in this dish are freezable so you could freeze them. Then you can eat them on another occasion.
