
Once upon a time my son Ted, who is nine, would not have touch a vegetable. It was always a challenge convincing Ted to eat vegetables on their own. I have had to hid all the vegetables in sauces, soups or stews.
Last Christmas I made a cauliflower and chestnut soup and I decided to hid the cauliflower in this one too. Although Ted really enjoyed the cauliflower and chestnut. When I told him the ingredients he wasn’t surprised and he told me he really liked it.
In fact Ted has been asking for that soup ever since. I will make that soup again but I love to experiment with flavours. Therefore I decided to try the creamy cauliflower crab soup which we all seemed to enjoyed it very much. It was very easy to prepare and cook and it was also very tasty too.

Equipment
- Sharp knife
- Chopping Board
- Saucepan
- Frying pan
- Blender
- Grater
- Teaspoon
Ingredients
- Onion x 1
- Garlic x 2
- Cauliflower x 1 head
- Milk x 600mls
- Bone broth x 400ml
- Crab x 2 – 4 tins
- Cheese x 50g
- Dried mixed herbs x 1 tsp
- Salt and pepper to taste
Method
- Cut the florets from the cauliflower and discard of the rest of it.
- Put a large pan of water onto a high heat and bring to the boil.
- Add a pinch of salt to the water and then add in the florets.
- When the water boils again turn the heat down and let the pan simmer for about 5 – 10 minutes.
- Or until the florets can fall from a fork.
- Meanwhile peel, slice and dice the onion and set to one side.
- Now peel the garlic and slice it.
- Put a frying pan onto a high heat on the hob and add the oil.
- Once the pan is hot add in the onions and fry for about 5 minutes or until they start to soften.
- If the pan gets to hot add a little bit of water to the base of the pan and continue to fry.
- Next add in the garlic and fry for another minute or so.
- Remove from the heat and leave to cool.
- When the cauliflower is fork fall remove from the heat and drain through a colander over the sink.
- Pour the milk and bone broth into the blender.
- Add in the cauliflower, fried onions and garlic, cheese cream fraiche, crab with the water and salt and pepper to taste.
- Blend all of these ingredients together until smooth.
- Depending on how big your blender is you may need to do this in batches.
- Once all the ingredients are blended pour back into the saucepan.
- Heat through until warm.
- Then serve with a piece of chunky bread and enjoy.

Creamy Cauliflower Crab Soup was delicious and we really enjoyed it. As I mentioned earlier it was very easy to prepare and cook as well. I made a large batch of this soup and froze the leftovers for another occasion. We have this soup to look forward to within the next six weeks. It was so tasty we might be having it again next week.
