
Chicken fajita are one of our favourite meals. They are such a great dish to throw on the table and let everyone help themselves. The other day I decided to make this dinner but I forget one vital ingredient . . . the wraps. I already had the chicken and all of the other ingredients. Therefore I decided to put all the ingredients into the slow cooker pot with a bit of chicken stock. The meal was amazing and one we had to share with you.

Equipment
- Sharp knife
- Chopping board
- Teaspoon
- Tablespoon
- Serving spoon
Ingredients
- Chicken Breast x 500g
- Onion x 1
- Red pepper x 1
- Courgette x 1
- Spinach x 1 handful
- Bone broth or chicken stock x 500mls
- Smoked paprika x 1 tsp
- Mild chili powder x 1 tsp
- Ground ginger x 1 tsp
- Ground sweet cinnamon x 1 tsp
- Salt and pepper to taste
- Sour cream x 4 tbsps
Method
- Peel, slice and dice the onion and put it into the slow cooker pot.
- Slice the top from the red pepper and remove the stalk and core.
- Now slice the flesh of the pepper.
- Peel the courgette if you want to and then slice it.
- Put these ingredients into the slow cooker pot.
- Cut the chicken breasts into inch pieces and add this to the pot as well.
- Pour over the bone broth or chicken stock.
- Sprinkle in the smoked paprika, mild chilli powder, ground ginger and ground sweet cinnamon.
- Then add salt and pepper to your tastes.
- Turn the slow cooker on for 5 – 6 hours on high or 2 – 3 hours on low.
- Cook the rice, quinoa or cous cous as per the packet instructions.
- When the ingredients are cooked add in the spinach and stir it in letting it wilt down.
- Finally add in the sour cream and stir again.
- Then serve with rice, quinoa or cous cous and enjoy.

Slow Cooker Creamy Spicy Fajita Chicken With Rice was a yummy dinner that we all enjoyed. It was easy to prepare and cook. When I cook a meal like this I occasionally make double so I can put the leftovers in the freezer. Then I have an even quicker meal for another occasion. Plus I always eat the leftovers from this dinner. My husband Howard and son Ted ate their with cheese on as well. Personally, I think it’s tasty with or without the cheese.
