Lemon Ice Lollies

The sun is shining and the weather is sweet so let’s start making ice lollies. My son Ted has been enjoying lemon yoghurt ice lollies recently. Therefore I thought I would make lemon lollies for Ted. I decided to try these with coconut water and sugar. I thought they were yummy but Ted wasn’t so keen. Even though they have sugar added they are still a little sharp. Although Ted didn’t like them I enjoyed these ice lollies. So these are ones just for me and maybe my husband Howard!

Equipment

  • Zester
  • Sharp knife
  • Chopping board
  • Tablespoon
  • Blender
  • Lolly molds

Ingredients

  • Lemons x 4 (flesh and zest)
  • Coconut water or water x 500mls
  • Erythritol or coconut sugar x 2 – 4 tbsps

Method

  • First zest the yellow skin from the lemons and put the skin into the blender.
  • Cut the top and remove the insides of the lemons and put the flesh into the blender.
  • Add in the coconut water or water and the sugar.
  • Blend these ingredients together.
  • Once everything is blended pour the mixture into the molds.
  • Put the molds into the freezer and freeze for six hours or preferably overnight.
  • Once they are frozen remove from the freezer put one under a warm tap to loosen the ice lolly.
  • Then pull, or push up in our case, when it’s easy too.
  • Finally serve and enjoy.
Lemon Ice Lollies

Lemon Ice Lollies were very yummy to me. Hee, hee! I really enjoyed this ice lolly. I have been eating them as a snack or after my dinner too. They have been very refreshing on a hot summers day.
