
Lemon and lime are a refreshing combination, especially in the summer. Therefore I decided to throw real lemons and limes into a blender with coconut milk. I had already tried lemon and yoghurt ice lollies and they were delicious. My son Ted, who is nine, suggested adding lime as well. I thought that coconut milk would make a nice change. The results of this recipe weren’t to shabby so I decided to share it with you.

Equipment
- Zester
- Sharp knife
- Chopping board
- Tablespoon
- Blender
- Lolly molds
Ingredients
- Lemons x 3 (flesh and zest)
- Limes x 3
- Coconut milk x 1 400ml tin
- Erythritol or coconut sugar x 2 – 4 tbsps
Method
- First zest the yellow skin from the lemons and limes put the skin into the blender.
- Zest the green skin from the limes and put the skin into the blender.
- Cut the top and remove the insides of the lemons and put the flesh into the blender.
- Then cut the top and remove the insides of the limes and put the flesh into the blender.
- Add in the yoghurt and the sugar.
- Blend these ingredients together.
- Once everything is blended pour the mixture into the molds.
- Put the molds into the freezer and freeze for six hours or preferably overnight.
- Once they are frozen remove from the freezer put one under a warm tap to loosen the ice lolly.
- Pull when it’s easy too.
- Finally serve and enjoy.

Coconut Lemon and Lime Ice Lollies were a yummy. We all really enjoyed these in the warm sunshine in the garden. They make a lovely sweet treat or a delicious dessert after lunch or dinner. These will keep in the freezer for up to 6 weeks. That’s if they last that long in your home. However you decide to eat these lollies, as always, please enjoy. xxx
