Pumpkin Spiced Chicory Latte

Many years ago, I would quite often visit a certain high street cafe and at this time of year I would buy a pumpkin latte. Nowadays I don’t tend to buy these drinks anymore. Firstly since giving up sugar I would probably think these drinks were to sweet and also I gave up coffee too. Sadly I like coffee but it doesn’t like me very much! Then I discover chicory. Chicory is a plant that tastes like coffee. It’s a perfect alternative and taste amazing as a pumpkin spice latte too. I loved this afternoon Halloween treat and I hope you will too.

Equipment

  • Cup or mug
  • Tablespoon
  • Teaspoon
  • Small saucepan
  • Sieve

Ingredients

  • Dried chicory x 1 tsp
  • Pumpkin puree x 2 tbsp
  • Milk (of your choice) x 2/3 of a cup of mug you intend to used
  • Ground sweet cinnamon x 1 tsp
  • Ground nutmeg x 1/4 tsp
  • Ground cloves x 1/8 tsp or a pinch
  • Maple syrup or honey x 1 – 2 tsp

Method

  • Put the chicory into the base of the saucepan.
  • Boil the kettle and once boiled pour over the hot water.
  • Pour in enough to cover the chicory and a tiny bit more.
  • It should be like an expresso shot.
  • Leave to brew.
  • Meanwhile put the small saucepan onto the hob.
  • Pour in the milk and pumpkin puree.
  • Next add in the spices and turn the heat onto high.
  • Stir these ingredients until the milk is warm.
  • Remove from the heat and set aside.
  • Put mug underneath the sieve and strain the chicory piece from the liquid.
  • Discard of the piece and pour the shot into the saucepan.
  • Stir all of these ingredients together.
  • Add in the maple syrup or honey and stir again.
  • Then pour the latte into the cup of mug and serve.
  • Finally enjoy.
Pumpkin Spice Chicory Latte

Pumpkin Spiced Latte was a delicious drink that I enjoyed all by myself. The pumpkin puree I had stored in the freezer in ice cube trays which made it very easy to make this drink. I had roasted a pumpkin at the weekend and then blended it with a little water to make a puree. I then froze it into ice cube trays. I remove the ice cubes from the freezer in the morning and waited for them to defrost. Then I made this delicious drink and I look forward to many more during the Winter months.
