
With Christmas fast approaching I felt it would be a good idea to make a 24 days of Christmas food for my Googie’s Kitchen and my YouTube Channel. I thought I would start off with this delicious pickle. I have made a slow cooker pickle in the past and it has been one of my best recipes. Therefore I thought I would make this recipe again but this time I added ginger to the recipe. The pickle was so yummy and of course I had to share this with you. Below is video and recipe for you.

Makes 2 Jars
Equipment needed
- Sharp knife
- Chopping board
- Slow cooker or large saucepan
- Teaspoon
- Stirring spoon
Ingredients
- Onions x 2 medium
- Carrots x 1 large
- Courgettes x 1 medium
- Cauliflower x 1/2 small
- Apples x 1 small
- Pear x 1 small
- Garlic x 4 cloves
- Ginger x 1 2 inch piece
- Turmeric x 1 long piece
- Medjool dates x 10 – 12
- Maple syrup x 150mls
- Apple cider x 300mls
- Lemon x 1 juice
- Mixed spice x 1 tsp
- Smoked paprika x 1 tsp
- Salt x 1 tsp
Method for slow cooker
- Start by peeling the courgette, carrots, onions and garlic.
- Next chop all the vegetables into small chunks and slice the garlic.
- Put these into the slow cooker.
- Peel the ginger and turmeric and slice and dice these ingredients as well.
- Chop the apple and pear, remove the core, cut into small pieces and add to the slow cooker.
- Now remove the stones from the dates and chop into small chunks too.
- Put these into the slow cooker as well.
- Pour in the cider vinegar and maple syrup.
- Then sprinkle over the mixed spice, smoked paprika and salt.
- Stir with a spoon until the vegetables have been covered with the liquids.
- Finally put on a low heat for 5 – 6 hours or a high heat for 2 – 3.
- Once the cooking time is over leave in the slow cooker until cooled.
- Then put into a sterilized jar and store in the fridge.
- We found the taste was better when we left the pickle for a week.
- Now put the pickle on that meat sandwich and enjoy.

Spicy Ginger Slow Cooker Pickle was a delicious pickle we all enjoyed. I ate it with cold meats and my husband Howard and son Ted ate it in cheese sandwiches. It is great to have as part of a buffet and it also makes a really good present for friends and family. You can eat it immediately but it is best left for a week in a cold, dry place or the fridge is good too. However you decide to share or enjoy this pickle, as always, please enjoy. Thank you.
