
Every year for a few year now I have been making my mum a hamper. Mum always tells me not to buy her any presents but she does love a homemade hamper. Each year I have put a variety of gifts into the box I make for her. Most years I have included biscuits or cookies. This year I will be including these delicious biscuits which I’m sure she is going to enjoy as much as we did. Below is a video and recipe for you.

Equipment needed
- Mixing bowl
- Blender
- Teaspoon
- Small saucepan
- Juicer or fork
- Mixing spoon
- Baking tray
- Cooling rack
Ingredients
- Gluten free oats / oats x 200g
- Rice flour or plain flour x 200g
- Baking powder x 1 tsp
- Nutmeg x 1 tsp
- Coconut oil x 150g
- Maple syrup x 60g
- Orange x 1 juice
Method
- Put the gluten free oats, rice flour, baking powder and ground nutmeg into the blender.
- Blender all of these ingredients together until a fine flour is formed.
- While the ingredients are in the blender you may need to push them around the cup with the spatula the blender comes with.
- It will help to move and blend the ingredients.
- Pour these ingredients into the large mixing bowl and set to one side.
- In the small saucepan melt the coconut oil if not melted already.
- Make a well in the ingredients in the large mixing bowl.
- Pour in the coconut oil, maple syrup and juice of the orange.
- Mixing all the ingredients together until they form a dough ball.
- Spread the extra brown rice flour or plain flour across the board you are using to roll out the dough.
- Roll out the dough to about a half centimetre thickness.
- Use the cutter and make your biscuits.
- Put the cut biscuits onto the chopping board and place into the fridge for 30 minutes.
- Meanwhile preheat the oven to 180°C or gas mark 4.
- After 30 minutes remove the biscuits from the fridge.
- Place on the baking tray and bake for around 12 – 15 minutes or until golden brown.
- Finally place on a cooling rack and leave to cool.

Orange and Nutmeg Biscuits / Cookies were so tasty. They are easy to prepare and cook and they will last about two weeks if stored in an airtight container. They make a brilliant gift for friends and relatives. As I said I’m sure my mum won’t be turning up her nose at a jar of these cookies.
