Orange and Ginger Slow Cooker Risotto

Christmas can be a busy time of year for so many people. It can take a lot of effort just thinking about all of the events and parties we have to go too. At this time of year I need easy but tasty meals that I can serve to my little family. I like to make dinners that I think other people can use if they are hosting a party as well. Personally I think this dish would be great to serve at a dinner party or I think we will be eating it on Christmas Eve. It’s a versatile dish that we all enjoyed. We hope you enjoy it too. Orange and Ginger Slow Cooker Crab Risotto

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable grater
  • Tablespoon
  • Teaspoon
  • Fork or juicer
  • Stirring spoon

Ingredients

  • Rice x 300g
  • Onions x 1
  • Carrot x 1
  • Green beans x 2 handfuls
  • Orange x 1 juice
  • Ginger x 1 – 2 tsps
  • Miso paste, tamari or soy sauce x 1 tbsps
  • Bone broth or chicken stock x 600mls
  • Crab x 2 – 4 tins
  • Salt and pepper to taste

Method

  • Peel, slice and dice the onion and then put it into the slow cooker pot.
  • Now peel the carrot and grate it and put this into the pot as well.
  • Wash the rice through the colander over the sink.
  • Add in the rice, green beans, miso paste and ginger to the pot.
  • Cut the orange in half and squeeze the juice into the pot.
  • Pour over the bone broth and stir all these ingredients together.
  • Add salt and pepper to your tastes.
  • Put the lid on the slow cooker pot and turn it on to high for 2 – 3 hours or on low for 5 – 6 hours.
  • Once all the liquid has disappeared the risotto will be cooked.
  • Add the tins of crab to the pot and stir it into the risotto.
  • Then serve and enjoy.

Orange and Ginger Slow Cooker Risotto was a hit with my little family. We really enjoyed this meal. It was an easy dinner to put together and as I mentioned earlier it would make a lovely dish to serve to a group of friends or relative. You could double the quantities. Unfortunately rice can not be frozen so you can’t make extra of this meal and freeze it. You can eat the leftovers the next day though. I wouldn’t leave it longer than a day.
