BBQ Prawn Rice

Prawns are still a huge favourite in our house so I’m always trying to think of new ways to cook this delicious seafood. Recently my son Ted has started to enjoy a little bit more spice with his meals. We found Dr Wills yummy BBQ sauce in the supermarket a little while ago. It’s not an advert for the company but it’s a great sauce to have to hand. I normally don’t like to use sauces because of all additives. Dr Wills is an all natural sauce that is gluten and dairy free. It tastes amazing and it’s a lovely sauce to use with prawns as well. We loved this dish and we hope you will too.

Equipment

  • Sharp knife
  • Chopping board
  • Saucepan
  • Tablespoon
  • Stirring spoon

Serves 4

Ingredients

  • Prawns x 500g
  • Spring onion x 1
  • Courgette x 1
  • Red Pepper x 1
  • Tomatoes x 1 240g tin
  • Chicken stock or bone broth x 250mls or enough to the cover the rice
  • Rice x 300g
  • BBQ Sauce x 2 tbsps (As mentioned earlier I used Dr Wills)
  • Tamari or soy sauce x 2 tbsps
  • Salt and pepper to taste
  • Green beans x handfuls

Method

  • Wash the rice under the tap in the kitchen twice and leave it to drain in the colander.
  • Cut the top from the red pepper and remove the stalk and core.
  • Now slice the flesh of the pepper and cut it into 1 centimetre pieces.
  • Peel the courgettes and grate them.
  • Remove the top and tails from the spring onions and slice into 1/2 centimetre pieces.
  • Put a large pan on a high heat and add enough oil to cover the base.
  • When the pan is hot add the spring onions and fry until they start to soften.
  • Add in the courgettes and red pepper and continue to fry for a further few minutes.
  • Pour over the tomatoes, tamari and BBQ sauce.
  • Add in the brown or white rice and stir until the rice starts to become see through/ clear.
  • It will take a good minute before it starts to happen.
  • Stir these ingredients together for a minutes.
  • Pour over the chicken stock or bone broth
  • Bring all these ingredients to the boil.
  • Turn the heat down to low and leave to simmer.
  • Taste the sauce to see if more salt and pepper is needed.
  • If so, add it at this point and then put the lid on the pan.
  • Leave to simmer until all the liquid has absorbed into the rice.
  • Before the end of the cooking process add in the green beans and stir them into the rice.
  • Leave them to cook for 2 – 3 minutes.
  • Now add in the prawns, if using uncooked prawns wait until they turn pink before removing the pan from the heat.
  • If using cooked prawns add them in and remove the pan from the heat.
  • Then serve and enjoy.
BBQ Prawn Rice

BBQ Prawn Rice was a big hit with my little family. It was an easy meal to prepare and cook. It would be a speedy weekend dinner or even a quick mid week meal. The dish is not freezable as it contains rice. Rice is best eaten fresh as if it’s left overnight it will grow mold. The mold is not good for the stomach. The dish is best eaten on the day it’s cooked. It would be good as leftovers the next day as long as it’s eaten with in the day and stored in the fridge overnight.
