Slow Cooker BBQ Beef and Potato Stew

During the summer months all I seem to dream about is eating stews and snuggling on a cold winter’s night. Then when winter is here all I can think about is warm days spent in the sunshine. As a human I never seem to be satisfied.

Therefore I thought I would combine Winter and Summer in a stew. I love soups and stews in winter but BBQ’s in summer. So I put the two together and came up with this meal. It was delicious and a dish I have no doubt we will be eating all year round. We loved this meal and we hope you do too. It’s one of those one pot wonders!!! Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Tablespoon
  • Stirring spoon

Ingredients

  • Mince beef x 500g
  • Onion x 1
  • Courgette x 1
  • Red pepper x 1
  • Green beans x 2 handfuls
  • Potatoes x 800g
  • Tomatoes x 1 400g tin
  • Bone broth or chicken stock x 200mls
  • BBQ sauce x 2 tbsps (I use Dr Wills)
  • Tamari x 2 tbsps
  • Salt and pepper to your tastes

Method

  • Start by peeling and chopping the onion and the garlic.
  • Then peel and grate the courgette.
  • Cut the top from the red pepper, remove the seeds and green stalks.
  • Slice and dice the flesh of the pepper.
  • Put these vegetables into the slow cooker pot.
  • Pour over the tinned tomatoes.
  • Add in the beef and brake it up in the slow cooker pot.
  • Next add in the green beans.
  • Peel and slice the potatoes into 1 inch pieces and put them into the pot.
  • Pour the BBQ sauce and tamari in too.
  • Add salt and pepper to taste.
  • Stir these ingredients together and place the lid on the slow cooker pot.
  • Turn the slow cooker onto high for 4 hours and low for 8 hours.
  • Then serve and enjoy.

Slow Cooker BBQ Beef and Potato Stew was a yummy meal that we all enjoyed. It was east to prepare and cook. So it makes a tasty mid week meal or a very quick weekend dish. All the ingredients in the dish can be frozen. You could make extras then freeze it for another occasion. Also it make a scrummy leftover lunch the next day as well.
