Spicy Beef Stir Fry Rice

Spicy beef in normally always on a Chinese takeaway menu. I didn’t want to recreate this dish but I did want to try and make it from scratch. Before I started cooking I went to the pantry to look for ingredients I would need to make this meal. I also wanted this dish to be simple so I have only used ginger. You can add as much or as little as you like. The dish was easy but also very tasty. It was a meal that we all enjoyed and it was so much better than buying it from a takeaway too. We loved it and we hope you will too.

Equipment

  • Saucepans x 2
  • Colander
  • Sharp knife
  • Chopping board
  • Tablespoon
  • Teaspoon
  • Stirring spoon

Ingredients

  • Mince or ground beef x 500g
  • Onion x 1
  • Red pepper x 1
  • Carrot x 1
  • Spinach x 1 1 handful
  • Brown rice x 300g
  • Ground ginger x 1 – 3 tsp
  • Garlic x 2 cloves
  • Tamari or soy sauce x 1 tbsp
  • Apple cider vinegar x 2 tbsps
  • Tomato puree x 2 tbsps
  • Honey or a sugar of your choice x 2 tbsps
  • Bone broth x 600mls
  • Salt and pepper to taste

Method

  • Measure the rice and put it into the saucepan.
  • Place the rice under the tap and add water.
  • Move the rice around in the pan.
  • The water should start to discolour with the starch from the rice.
  • Pour through the colander and repeat the process once or twice more.
  • By the end of the process the water should start to look more clear.
  • Put the saucepan onto the hob and pour over the bone broth, chicken stock, vegetable stock or water.
  • There must be enough to cover the rice and then two centimetres above the top of where the rice sits in the pan.
  • Sprinkle in salt to your tastes.
  • Put the pan onto a high heat on the hob and put the lid on.
  • Let the pan come to the boil.
  • When the pan is boiling turn the heat down to a medium heat.
  • Leave the pan to simmer until all of the liquid has disappeared.
  • It will take a little while to cook the rice so please be patient.
  • On my hob it takes a good 30 minutes but other hobs my be different.
  • Once the liquid has disappeared remove from the heat.
  • Be careful towards the end as the rice can sometimes stick to the base of the pan.
  • Towards the end be sure to check by putting the spoon in the rice to see if there is any liquid left.
  • If there is no liquid fluff it with the spoon.
  • However if there is liquid put the lid back on and leave for a further few minutes.
  • Continue this process until all the liquid disappears.
  • In the small glass bowl mix the tamari, apple cider vinegar, tomato puree, honey or sugar of your choice, ground ginger and garlic.
  • Mix these ingredients together and set the bowl aside.
  • Remove from the heat and leave to cool.
  • Peel and grate the carrot.
  • Slice the top from the red pepper and remove the core and the stalk.
  • Now slice and dice the flesh.
  • Next peel, slice and dice the onion.
  • Squash the garlic under the knife and remove the skin.
  • Slice the garlic as thinly as possible.
  • Put the other saucepan onto a high heat on the hob.
  • Add oil to the base of the pan and leave it to heat up.
  • When the pan is hot add the onion in and fry until it starts to soften.
  • Next add in the red pepper and fry for a further five minutes.
  • If the pan starts to get to hot and the ingredients stick to the base turn the heat down and add a little water to loosen them.
  • Next add in the carrot and fry for a further few minutes.
  • Add in the beef and fry until it starts to turn golden brown.
  • Pour over the mixture you made earlier and stir into the other ingredients in the pan.
  • Add in the cooked rice and stir everything together.
  • Chop the spinach and add this in too until it starts to wilt in the pan.
  • Remove the meal from the hob and serve.
  • Then enjoy.

Spicy Beef Stir Fry Rice was a great dinner. It was easy to prepare and cook. The dish can be eaten as leftovers the next day. Don’t leave it any longer than a day and sadly the meal can’t be frozen either. As soon as rice is cooked is starts to produce germs that aren’t good for our stomachs.
