
Chicken and apricots may not sound that appealing but trust me this dish was delicious. Normally these ingredients would be used in a tagine with lots of spices. It did cross my mind but I felt that we needed a few herbs in our diet this time. Herbs can something be bitter but adding the apricots gave the dish sweetness that we enjoyed. - Sharp knife
- Chopping board
- Tablespoon

Ingredients
- Chicken breast x 500g
- Chopped apricots x 6 – 8
- Leek x 1
- Green pepper x 1
- Carrot x 1
- Oregano x 1 – 2 small sprigs or 2 tsp of dried
- Thyme x 1 – 2 small sprigs or 2 tsp of dried
- Rosemary x 1 – 2 small sprigs or 2 tsp of dried
- Bone broth x 800mls
- Tamari or soy sauce x s tbsps
- Salt and pepper to taste
Method
- Start by chopping the apricots into small pieces if they have been chopped already.
- Remove the top and the bottom from the leek and then slice it into half centimetre pieces.
- Cut the top from the pepper and remove the core and the stalk.
- Slice and dice the flesh.
- Peel the carrot and then slice and dice it.
- Cut the chicken breasts into 1 inch pieces and put all of these ingredients into the slow cooker pot.
- Add in the oregano, thyme and rosemary.
- Pour over the bone broth or chicken stock and the tamari or soy sauce.
- Add salt and pepper to taste.
- Stir all these ingredients together.
- Put the slow cooker on high for 2 – 3 hours or on low for 7 – 8 hours.
- Toward the end of the cooking process cook the pasta or rice or carbohydrate of your choice.
- Then serve and enjoy.

Slow Cooker Chicken and Apricot Stew as I mentioned earlier was so tasty. I served mine with pasta but you could serve it with rice or even bread. It was easy to prepare and cook. All the ingredients are freezable, apart from the rice, so you could make a big batch and freeze it for another occasion. It also made yummy leftovers too.
