One of our favourite dinners is chicken fajitas. We love them but I often want to change our meals. The other night I was trying to decide what to have for dinner. I really fancied a stir fry but I also wanted spices in my dinner. Therefore I decided to fuse two meals. I made the chicken fajita filling into a stir fry rice. It was so yummy and we ate the lot. As you can probably tell we loved it as much as we like fajitas. So we hope you enjoy this dinner too. Below is a video and recipe for you.

Ingredients
Chicken x 500g
Onion x 1
Red pepper x 1
Courgette x 1
Brown rice x 300g
Tamari x 2 tbsps
Smoked paprika x 1 tsp
Mild, medium or hot chilli powder x 2 tsp
Ground cumin x 1 tsp
Ground coriander x 1 tsp
Ground sweet cinnamon x 1 tsp
Dried oregano x 1 tsp
Chicken stock x 600mls
Salt and pepper to taste
Fresh coriander x 1 handful.
Method
Measure the rice and put it into the saucepan.
Place the rice under the tap and add water.
Move the rice around in the pan.
The water should start to discolour with the starch from the rice.
Pour through the colander and repeat the process once or twice more.
By the end of the process the water should start to look more clear.
Put the saucepan onto the hob and pour over the bone broth, chicken stock, vegetable stock or water.
There must be enough to cover the rice and then two centimetres above the top of where the rice sits in the pan.
Sprinkle in salt to you tastes.
Put the pan onto a high heat on the hob and put the lid on.
Let the pan come to the boil.
When the pan is boiling turn the heat down to a medium heat.
Leave the pan to simmer until all of the liquid has disappeared.
It will take a little while to cook the rice so please be patient.
On my hob it takes a good 30 minutes but other hobs my be different.
Once the liquid has disappeared remove from the heat.
Be careful towards the end as the rice can sometimes stick to the base of the pan.
Towards the end be sure to check by putting the spoon in the rice to see if there is any liquid left.
If there is no liquid fluff it with the spoon.
However if there is liquid put the lid back on and leave for a further few minutes.
Continue this process until all the liquid disappears.
Set the rice to one side.
Peel, slice and dice the onion.
Slice the top from the red pepper and remove the core and the stalk.
Now slice and dice the flesh.
Next peel the courgette and grate it.
Set these ingredients aside.
Cut the chicken breasts into 1 inch pieces.
Put the saucepan onto a high heat on the hob.
Add oil to the base of the pan and leave the pan to heat up.
When the pan is hot add in the onions and fry until the start to soften.
Now add in the red pepper and fry until the pepper starts to soften.
It will take a little time before the pepper softens so keep frying.
Once the pepper has softened add in the courgette.
Continue to fry until it’s warmed through.
This should only take a minute or so.
Add in the chicken and fry until golden brown.
Sprinkle over the smoked paprika, mild, medium or hot chilli powder, ground cumin, ground coriander, ground sweet cinnamon and dried oregano.
Stir these ingredients together until the spices are well mixed in.
If the ingredients start to stick to the pan turn the heat down and add a little water.
Add the cooked rice back into the pan and stir everything together.
Pour over the tamari or soy sauce and continue stirring.
Sprinkle over salt and pepper to taste.
Chop the coriander and stir into the rice dish.
Remove from the heat and serve with a wedge of lime.
Squeeze the lime over the dish and then enjoy.
Spicy Mexican Chicken Stir Fry Rice
Spicy Mexican Stir Fry Rice was a delicious dinner. It was easy to prepare and cook. The dish can be eaten as leftovers the next day. Don’t leave it any longer than a day and sadly, the meal can’t be frozen either. As soon as rice is cooked is starts to produce germs that aren’t good for our stomachs. It’s best to eat rice as soon as possible. You could also serve this dish with a tomato salad or soured cream too. However you decide to eat this meal, as always, please enjoy. Thank you xxx
