
To be honest I didn’t ever think about putting fruit and fish together. In the past I have cooked with oranges and salmon but I thought that might be it. Then I started to think about a fruity fish dish and I decided to give it a try.
The sauce I made for this recipe doesn’t need to be blended. In our house there are slightly fussy eaters. Therefore I need to hide the ingredients in my sauces. So I blend them together. They are delicious and everyone enjoyed this meal. We hope you will too, blended or not. Below is a video and recipe for you.

Equipment
- Sharp knife
- Chopping board
- Large saucepan
- Stirring spoon
- Tablespoon
- Teaspoon
- Blender
- Baking tray
Ingredients
- Basa x 500g
- Onion x 1
- Courgette x 1
- Red pepper x 1
- Pineapple x 100g
- Tinned tomatoes x 1 tin
- Tomato puree x 2 tbsps
- Mild chilli powder x 1 tsp
- Nigella seeds x 1 tsp
- Ground ginger x 1 tsp
- Smoked paprika x 1 tsp
- Salt and pepper to taste
- Rice x 300g x 1 recipe
Method
- Peel the courgette and grate it.
- Cut the top from the red pepper and remove the core and the stalk.
- Slice and dice the flesh.
- Remove the skin from the pineapple and cut the pineapple into 1 inch pieces.
- Set these ingredients to one side.
- Peel, slice and dice the onion.
- Put the large saucepan onto a high heat on the hob and add oil to the base.
- Once the pan is hot add in the diced onion and fry until it starts to soften.
- Next add in the red pepper and fry until it starts to soften.
- If the pan is getting a little too hot turn the heat down and add a little water to the base.
- Once the pepper is soft add in the courgette and fry for a further minute or so.
- Finally add in the pineapple and continue to fry for a further few minutes.
- Pour over the tomatoes and add in the tomato puree.
- Next sprinkle in the mild, medium or hot chilli powder, nigella seeds, ground ginger and smoked paprika.
- Add salt and pepper to your tastes.
- Turn the heat down to a low heat and leave the sauce to simmer until it becomes jammy.
- Once the sauce looks jammy remove from the heat and leave to cool.
- When it’s cool enough to touch add it to the blender and blend all these ingredients together.
- Once they are blended pour the sauce back into the pan and put back onto a low heat on the hob.
- Leave to simmer while you cook the fish and rice.
- Preheat the oven to 180°C or gas mark 5.
- When the oven has preheated put the fish on an pre-oiled (if necessary) baking tray.
- Put the tray into the oven and cook as the packet instructions suggest.
- Cook the rice or quinoa as per the recipe.
- Then serve with greens or a salad and enjoy.

Fruity Fish Dish was yummy. It was a slightly time consuming recipe but the efforts were worth the results. It was easy to prepare and cook. The sauce could be made in advance of the meal and frozen until you need it. Then all you have to do is defrost it and cook it when you cook the fish and rice. It also made yummy leftovers the next day too. However you decide to eat this meal, as always, please enjoy. Thank you xxx
