Slow Cooker Orange and Sage Roast Chicken

Orange and chicken are not normally two ingredients that go together. A few years ago I made an orange and fennel slow cooker roast chicken and it was delicious. I wanted to eat it again but I didn’t have any fennel. I decided to try the meal with sage instead. I have a large sage bush growing in the garden so it’s always nice to find recipes to use it in. The sage worked really well with the orange and the chicken. It’s definitely a roast I will be trying again soon. Below is a video and recipe for you.

Equipment

  • Kitchen towel
  • Sharp knife
  • Chopping board
  • Roasting tray

Ingredients

  • Chicken x 1 large
  • Orange x 1
  • Sage x 8 – 10 leaves
  • Onion x 1
  • Olive oil or an oil of your choice
  • Salt and pepper to taste

Method

  • Remove all the packaging from the chicken and pat dry with kitchen towel.
  • Cut the orange into quarters and put this into the cavity of the chicken.
  • Add in the sage leaves as well.
  • Peel the onion and cut into quarters.
  • Again put these ingredients into the cavity of the chicken.
  • Drizzle olive oil over the skin and underneath the skin as well.
  • Carefully using your hands peel the skin of the chicken from the flesh and rub the olive oil in.
  • Rub the oil over the skin as well
  • Sprinkle the chicken with salt and pepper.
  • Put into the slow cooker.
  • Turn the slow cooker onto high for 3 – 4 hours and low for 7 – 8 hours.
  • If you want the skin crispy preheat the oven to 200°C 30 minutes before the end of the cooking time.
  • When the chicken has cooked transfer to a baking dish and put into the oven for 15 – 20 minutes.
  • Then remove and leave to rest for a good 20 – 30 minutes.
  • Carve the chicken and serve with roast potatoes, roast carrots and parsnips and cabbage.
  • Keep the juice from the bottom of the slow cooker as gravy and pour that over the chicken.
  • Then enjoy.

Slow Cooker Orange and Sage Roast Chicken was a yummy meal. It was an easy roast dinner to prepare and cook. The meat is made in advance of the meal so this makes the dish even simpler. Any leftovers can be frozen and used in another meal. Also I like to throw leftover cooked meat into a pasta or rice salad the next day. However you decide to eat this meal, as always, please enjoy.
