
The one thing I love about our garden is the pots on the patio. For the past few years I have decided to grow mint in the pots. After I drop my son Ted to school in the morning I come home and go into the garden. I pick the three varieties of mint we have growing in the garden. Then I come back inside and make myself a cup of mint and lemon tea. As it’s summer I decided to make my mint tea into a cold brew. It was a deliciously refreshing drink that I now can’t stop drinking. I hope you enjoy it as much as I do.

Equipment
- Kettle
- Glass jug or bowl
- Sieve
Ingredients
- Mint leaves x 4 – 5 leaves
- Lemon x 1
- Honey x 1 – 2 tsp (Optional)
- Water x 800 ml – 1 litre
Method
- Wash the mint leaves and put these into the glass jug or bowl.
- Slice the lemon in half and squeeze the juice from the halves.
- Cut the lemon halves into slices and put these into the bowl.
- Boil the kettle and add the hot water to the bowl.
- Add in the honey and stir. (Optional).
- Leave to cool completely.
- Strain the tea through the sieve if you want to.
- Or you can leave the leaves and lemon slices in the water.
- Store in the fridge overnight in an airtight container.
- Then serve and enjoy.

Mint and Lemon Cold Brew Tea was a refreshing drink that I enjoyed all by myself. I love a herbal tea in the morning, afternoon and evening. I decided to drink this one after my lunch. It made a nice change from my usual mint tea. By adding the honey to it made a lovely change. It’s one recipe I will be be remembering in future.
