Christmas Spiced Brownie (Vegan)

Brownies are always well received in our house. My husband Howard, son Ted and I all have a sweet tooth and we would probably fight over the last piece of brownie. In fact I know we would fight for the last piece. With Christmas on the way I felt it was time to roll out the spices and bake them in a chocolate brownie. Brownies make a really tasty sweet treat and also a great gift for a friend or relative. That’s if you don’t mind giving them away!!! Below is a video and recipe for you.

Equipment

  • Large mixing bowl
  • Masher or fork
  • Stirring spoon
  • Teaspoon
  • Grease proof paper
  • Baking tray
  • Cooling rack
  • Chopping board

Ingredients

  • Very ripe bananas x 3
  • Coconut oil x 125g
  • Coconut sugar or brown sugar x 150g
  • Ground flax seed x 50g
  • Raw cacao powder x 50g
  • Almond flour x 200g
  • Rice protein (or a protein of your choice) or rice flour or tapioca starch x 100g
  • Baking powder x 1 tsp
  • Apple cider vinegar x 1 tsp
  • Ground Ginger x 2 tsps
  • Ground sweet cinnamon x 1 tsp
  • Ground nutmeg x 1/2 tsp
  • Ground cloves x 1/2 tsp
  • Vanilla extract x 1 tsp
  • Milk (of your choice) 20 – 50mls (optional)
  • Salt x 1/2 teaspoon

Method

  • Peel and mash the bananas in a large bowl.
  • Add in the coconut oil and coconut sugar or brown sugar.
  • Mix these ingredients together.
  • Next add in the ground flax seed and mix together.
  • Add in the baking powder, apple cider vinegar, ground ginger, ground nutmeg, ground sweet cinnamon, ground cloves, vanilla extract and salt.
  • Now mix these ingredients together.
  • Then add in the almond flour and rice protein (or a protein of your choice) or rice flour or tapioca starch.
  • Mix everything together and if the mixture if thick add a little milk.
  • Add the milk a little at a time until it resemble brownie batter.
  • Set the mixture to one side and prepare the baking tray.
  • Cut a piece of grease proof paper slightly bigger than the baking tin.
  • Scrunch the paper in your hands and set to one side.
  • Grease the bottom of the tin and place the grease proof paper in the tin as evenly as possible.
  • Then add a little more oil to the top of the grease proof paper.
  • Pour the batter into the tin and spread as evenly as possible across the base.
  • Place the batter into the fridge for at least 30 minutes.
  • Preheat the oven to 180°C or gas mark 5.
  • Once the oven has preheated put the batter mix into the oven.
  • Bake for 25 – 30 minutes or until it turns golden brown.
  • To check the brownie is cooked put a skewer in and if it comes out with a little bit of batter on it’s done.
  • If not put the brownie bake in cook for a further few minutes.
  • Check again with the skewer.
  • Repeat this process until the skewer is clean ish.
  • Remove from the oven and leave to cool completely.
  • Then serve with a side of your choice or none at all and enjoy.

Christmas Spiced Brownie (Vegan) were delicious. Yes we did fight over the last piece too. These were easy to prepare and cook. They are freezable if you don’t use rice flour or protein. They are also yummy as a dessert too. You could serve these with ice cream, cream or even custard. However you decide to eat these brownies, as always, please enjoy. Thank you. xxx
