
Christmas can be a stressful time of year. Especially when we have relatives coming to stay. I love to cook but I’m definitely in favour of making it as easy as possible. The slow cooker is possibly the most used item in my kitchen. I really enjoy slow cooker meals and it can make life so simple. I know beef is not a traditional meat to have at Christmas but I’m all for ease during the festive season. As long as their is a big roast dinner on the table I’m sure the relatives will be happy and you will be less stressed. It’s simple really! Below is a video and recipe for you.

Serves 6 – 8
Equipment needed
- Sharp knife
- Chopping board
- Frying pan
- Tongs
- Peeler
- Slow cooker
- Measuring jug
- Skewer
- Fish slice
Ingredients
- Rolled beef brisket x 1.5kg
- Onions x 2
- Carrots x 2
- Celery x 2
- Tomatoes x 2
- Garlic x 2 cloves
- Bay leaves x 2 leaves
- Rosemary x 2 – 4 small stalks
- Thyme x 2 -4 stalks
- Bone broth x 250ml
- Salt and Pepper to taste
Method
- Put the frying pan onto a medium to high heat on the hob.
- Add oil to the base of the pan and leave to heat up.
- While the pan is heating up if necessary cut the beef in half and score the fat.
- Pour oil over the beef and spread with a brush.
- Once the beef is covered in the oil sprinkle over the salt and pepper.
- When the pan is hot put the beef in fat side down.
- Cook for about two minutes on this side or until the fat is golden brown.
- Then turn the beef over and cook until all the other sides are golden brown.
- Remove the beef from the pan and set aside.
- Peel the onion and then chopping it into quarters.
- Next top and tail the carrots, peel them and then roughly chop into large chunks.
- Add these ingredients to the slow cooker pot along with the bone broth, garlic, bay leaves, rosemary, thyme and chickpea flour.
- Turn the slow cooker onto high for 2 – 3 hours or low for 5 – 6.
- The meat by the end of the cooking time will be really tender and soft.
- Then leave to rest for about 30 minutes on both occasions.
- During the cooking process you can cook your roast vegetables and while the beef is resting make a gravy.
- To make the gravy you can use the stock from the bottom of the pan.
- Pour the liquid from the pot thorough a colander and into a saucepan.
- Put the saucepan onto a medium heat on the hob and heat the liquid through.
- Then slice the beef, serve the vegetables, add the gravy, serve and enjoy.

Slow Cooker Roast Beef is a great recipe. I can put the roast beef in the slow cooker and I do not have to worry about cooking that part of the meal. It makes a Christmas or a Sunday roast so much easier. Don’t get me wrong I love cooking a roast but I’m all for making life easier. I normally buy a piece of beef that is double what we will need, then freeze the leftovers and use them in other dishes. However you decide to eat this dish, as always, please enjoy. Thank you xxx
