
My dear old Dad used to love roast beef. Normally, if there were any leftover he would make himself a roast beef and tomato sandwich. I have a vivid memory of him enjoying this sandwich a few days after Christmas.
Although if there was a lot leftover he would make this dish. I always really enjoyed this meal and I remember eating this dinner from when I was 5 until I was 25 years old. It’s one of those dishes that made me appreciate the leftovers. It amazes me how you can make leftovers into another meal. As it’s almost Christmas, of course, I had to share the recipe with you.

Equipment
- Baking trays x 2
- Measuring jug
- Tablespoon
- Large mixing bowl
- Potato masher
Ingredients
- Leftover roast beef x 4 – 8 slices or 400g
- Parma ham x 4 – 8 slices
- Leftover gravy x 250 mls
- Potatoes x 800 – 1 kg
- Olive oil x 2 – 4 tbsps
- Milk x 2o mls (your choice)
- Salt and pepper to taste
Method
- Preheat the oven to 200°C or gas mark 6.
- Once the oven has preheated pierce the potatoes and place them into the baking tray.
- Put the baking tray into the oven.
- Cook the potatoes for an hour or until they are soft in the middle.
- Remove the potatoes from the oven and leave to cool.
- Turn the heat down to 150°C or gas mark 3 – 4.
- Next put the beef and Parma ham in layers into the baking tray.
- Pour the gravy over the top.
- Put the tray into the oven and cook for about 10 – 15 minutes.
- The meat wants to warm through but it doesn’t need to cook again.
- Meanwhile make the mash potato.
- Scoop out the flesh of the potatoes from the skin and place the flesh into the large mixing bowl.
- Add in the olive oil and milk and sprinkle over salt and pepper to taste.
- Mash these ingredients together.
- When the meat has warmed through remove from the oven.
- Then serve the roast beef and Parma ham with mash and a side of your choice.
- Pour over the gravy.
- Finally enjoy.

Leftover Roast Beef and Parma Ham with Mash Potatoes was yummy. I make this meal for my little family and they love it too. Once the roast beef has been cooked the leftovers can be frozen. They will keep in the freezer for up to 6 months. This dinner is easy to prepare and cook. Although it is slightly time consuming the efforts are worth the results.
