
Many years ago I had a friend who used to love boxing day. For those of you that don’t know boxing day is the day after Christmas day in the UK. My friend loved boxing day more than Christmas day. Her mum would make turkey curry with the leftover turkey from Christmas day. Which she really enjoyed.
We don’t normally have turkey on Christmas day in our house but I thought it would be a good idea to share a tasty turkey curry recipe with you. The leftover meat from Christmas can be eaten in a yummy curry. Personally I think this is a great way to use the leftovers and I hope you do too. Below is video and recipe for you.

Serves 4
Equipment
- Sharp knife
- Chopping board
- Saucepan
- Tablespoon
- Teaspoon
- Stirring spoon
Ingredients
- Leftover Turkey x 500g
- Onion x 1
- Garlic x 2 cloves
- Courgette x 1
- Tomatoes x 1 400g tin
- Chicken or vegetable stock
- Ground ginger x 1 tsp
- Ground cumin x 1 tsp
- Ground coriander x 1 tsp
- Garam masala x 1 tsp
- Ground sweet cinnamon x 1/2 tsp
- Dried oregano x 1 tsp
- Salt and pepper to taste
- Spinach x 1 handful
- Coriander x 1 handful
- Yoghurt or coconut cream x 2 – 4 tbsps (optional)
Method
- Peel, slice and dice an onion.
- Next peel and grate the courgette.
- Squash the garlic underneath the knife and remove the skin.
- Slice the garlic and set these ingredients aside.
- Put a large pan onto a high to medium heat on the hob and add oil to the base of the pan.
- Leave the pan to heat up.
- Once the pan is hot put the onion into the base of the pan and fry until they start to soften.
- Add in the garlic and fry for about 30 seconds or so or until you can smell it.
- Then add in the grated courgette and fry for another minute or so.
- Until the courgette has warmed through.
- Sprinkle over the ground ginger, ground coriander, ground cumin, garam masala, ground sweet cinnamon and dried oregano.
- Mix the spices and herb into the vegetables.
- Now pour over the tomatoes and pour the stock into the empty tin.
- Carefully swill the stock round the base of the tin until the tomato juice has cleared from around the sides.
- Then pour into the saucepan.
- Next sprinkle over salt and pepper to taste.
- Stir everything together and turn the heat down to a low to medium heat.
- Leave to simmer for about 20 – 30 minutes.
- After this time the sauce must look jammy.
- There must be no liquid when the spoon is pulled through the sauce.
- If the sauce is jammy chop the spinach and coriander.
- Add these ingredients to the pan and stir in until they wilt down in the sauce.
- Finally add in the leftover turkey and mix into the sauce.
- At this point you could add yoghurt or coconut cream too.
- Then serve with rice or a side of your choice and enjoy.

Leftover Turkey Curry – 24 Days of Christmas was a delicious curry. It was an easy meal to prepare and cook. The sauce could be made and frozen in advance of the meal. Then all you have to do is add the turkey into the sauce. You can also cook the sauce and freeze it with the turkey. All the ingredients are freezable so it’s a great meal to keep in the freezer for up to six weeks. To serve you cook cook rice, quinoa or couscous or you could cook sweet potato mash or mash potatoes too. It makes delicious leftovers too.
