Slow Cooker Roast Chicken Wrapped in Parma Ham with Garlic Ghee

Roast dinners are all about timings. Everything must be timed in ordered to be served together. It can be quite a challenge for people who have never really cooked a roast. I enjoy cooking roast dinners but occasionally I like to make it easy.

For me the slow cooker is the prefect solution. It can take the main bulk of work out of the equation. Also cooking chicken breasts instead of a whole bird makes it so much easier too. Plus you can still have a tasty meal on the table in time for dinner. We loved this dish and we hope you will too.

Serves 4

Equipment

  • Sharp knife
  • Chopping board
  • Roasting tray
  • Skewer

Ingredients

  • Chicken breasts x 2 or 4 large
  • Parma or Prosciutto ham x 8 slices
  • Garlic ghee x 4 tbsp

Method

  • Preheat the oven to 180° or gas mark 4.
  • Peel and slice the garlic then set aside.
  • Put the chicken breasts onto the chopping and cut them lengthways in half.
  • Open the chicken breasts out so they lay flat on the chopping board.
  • Spread the garlic ghee as evenly as you can in the chicken breasts.
  • Fold the breast back over.
  • Wrap the each chicken breast in 2 pieces of Parma or Prosciutto ham.
  • Place the chicken breasts into the slow cooker.
  • Turn the pot on for 5 – 6 hours on low or 2 – 3 hours on high.
  • Once the time has finished on the pot put a skewer into each breast and if the juices run clear the chicken is cooked.
  • If not, put the chicken back into the pot for another 15 minutes or until the juices run clear.
  • Remove the chicken from the pot and leave to rest for 10 minutes.
  • Then serve with roast potatoes and cabbage.
  • Enjoy.

The chicken could be prepared the day before and stored in the fridge overnight. It was so tasty with roast potatoes and cabbage. The leftovers were good in a pasta salad the next day too.
